Elegant Orzo with Wilted Spinach and Pine Nuts

I've made this a few times and it is so easy and yummy. It is still good with less olive oil and/or butter. The feta and fresh tomatoes on top really make it delicious!

Cornish Game Hens with Garlic and Rosemary

Turned out great! I cooked them with diced potatoes underneath. I used dried rosemary and bottled lemon juice. Delicious!

Thai Curry Tofu

Too salty for me. Next time I will decrease the salt and maybe try adding some sugar like other reviewers suggested. I think it would also be good with pineapple.

Very tasty and simple to make. I used homemade French dressing... I probably could have made it without the oil since the sauce was unnessarily oily. I removed the skin from the chicken thighs, which I recommend. It was great with rice!

Vegan Brownies

These brownies are so yummy! They are a little crumbly, but I don't mind because the flavor is exceptional! It's also a bonus that they are so simple to make - no unusual ingredients and all in one bowl. I have made them 3-4 times in the last month!
