Charley's Slow Cooker Mexican Style Meat

very good and great heat. I used a 3lb roast. Also added 1 can of beef broth instead of water. Only 3 oz of hotsauce (I used Trappey's) Added the cumin like Impish recommended. Cooked in the crockpot on high for 8 hrs. Definitley will be making this again!

Suki's Spinach and Feta Pasta

I have made this twice and both times it was great. I used a mixture of regular penne pasta and whole wheat penne pasta the first time and could not tell a difference in taste. The second time I used all whole wheat and it was still yummy! I also added a can of black olives and will be adding some capers next time. The feta cheese is a MUST. It makes the dish. I also used two can of petite diced tomatoe and a whole bag of fresh baby spinach. I like lots of "sauce" on my pasta! This recipe is soooo healthy! I even used it for a recipe exchange amongst friends.

Dinah's Stuffed Mushrooms

I had high hopes for this, but it did not meet my expectations. I let it sit in the fridge for 24 hrs so the tastes would meld, but it didn't help. I only used about 1/3 the butter and I still thought my arteries were going to burst. I used the juice from the clams like suggested. However, the taste of the Italian Seasoning is WAAAAAY overwhelming. You could easily use half. Lemon Juice squeezed on top does help a bit, but man, cut down on the Italian Seasoning! I would not make this again without some adjustments.

Pepperoni Pizzazz

I substituted turkey pepperoni, added some black olives, and added an extra can of mushrooms. This was very good. I set out Ranch dressing as a topping, but it does add more calories.

Satiny Chocolate Glaze

Yummy! I followed the recipe exactly, except I put it in the microwave instead of the broiler, and it came out awesome! Super shiny, just the right amount of sweet, and so easy! This was for a glaze on a chocolate bundt cake, but there was enough left over to dip some strawberries in.

Jamie's Cranberry Spinach Salad

I used Splenda instead of sugar and it was still waaay too sweet. Otherwise, it is a great salad. I wouldn't make it main course, though. It is not filling enough to stand alone.

If you love vegetables, you will love this soup. It is a great healthy comfort food. I DEFINITELY recommend not combining the noodles with the vegetables before serving or when putting up the leftovers. The pasta will absorb all the juice. I served the soup over the pasta, but when I went to put the leftovers in the fridge, I mixed it all together in the same storage container. Don't do this. The pasta absorbs all the soup. Thanks for a great recipe.

Basic Baked Spaghetti

I have made this twice and it's a neutral for me. I cringe when I see the fat from the cheese bubbling, but knowing that my BF loves cheese, I go ahead and do it. It does refrigerate well, and is very easy to serve leftovers in cubes or squares the next day. Overall, it's a nice change once in awhile from the basic spaghetti recipe.

Tortilla Soup II

This is a keeper! It was just the right amount of "heat". I did make some modifications: Added a can of black beans (rinsed), a can of black olives, a can of corn (no jiuce), and a small can of tomato sauce. I added an extra can of chicken broth and extra cumin. I also added cornstarch to thicken it up. For garnishes, I used low fat sour cream, cubed avocado, fresh cilantro (also put in the soup while on the stove), and grated cheese. This was so good!

I like seafood, but this was waaaayyyy to fishy for me. My boyfriend liked it, he went back for seconds. I scaled it down to 4 servings and substituted Alaskan Cod, Olive oil, and cilantro. I won't make this again. It wasn't on the cheap side and the taste was just not for me.

Tomato Chicken Parmesan

I have made this twice and it is soooooo yummy! Freezes very well, too. I took the recommendation os another poster and put the chicken in the fridge for about 20 minutes and then the raw breaded chicken on top of the sauce and cooked in the oven for about 45 minutes. Put cheese on with about 15 minutes left and added more sauce on top. Served with fettucinne and a caesar salad with breadsticks. YUM...this recipe is my favorite so far from this site!

Romantic Chicken with Artichokes and Mushrooms

My boyfriend loves this recipe!!! I added sliced black olives to give it some color and I served it over fettecine. Kinda drab looking on a plate, but wonderful taste!!
