I'm on the road a lot as I am a flight attendant. But I carry a huge cooler with me because it saves me money on food and I tend to eat healthier and on my own schedule when I do. I love carrying leftovers to share with my crew. I am also an avid exerciser, and I love to read. My idea of heaven is a snow covered mountain and me in skis. ;)
My favorite things to cook
I love to cook Mexican food. I grew up eating it, but I like to try to make it healthier.
My favorite family cooking traditions
I am normally the salad maker in my house. I love to use all types of vegetables to make the salad really colorful. I have been experimenting with making my own low-cal/fat dressings and it is not as hard as I thought it would be. I'd love to cook some of the main dishes, but there are too many older Mexican women in my family that have claim to those dishes!
My cooking triumphs
I get asked to bring specific dishes to parties. It makes me feel LOVED. ;)
My cooking tragedies
I once used ground snake (yes, you read that correctly!) thinking it was garlic powder. It was in a non-labled jar and I thought my mom had just put some bulk garlic in a smaller container. The first time I made Mexican rice I didn't know it was hard until I took a bite. By then, the whole table had tasted it, but hadn't said anything. I immediately made everyone throw it away. I don't like when people force themselves to eat something just to not hurt my feelings!

Charley's Slow Cooker Mexican Style Meat
very good and great heat. I used a 3lb roast. Also added 1 can of beef broth instead of water. Only 3 oz of hotsauce (I used Trappey's) Added the cumin like Impish recommended. Cooked in the crockpot on high for 8 hrs. Definitley will be making this again!

Suki's Spinach and Feta Pasta
I have made this twice and both times it was great. I used a mixture of regular penne pasta and whole wheat penne pasta the first time and could not tell a difference in taste. The second time I used all whole wheat and it was still yummy! I also added a can of black olives and will be adding some capers next time. The feta cheese is a MUST. It makes the dish. I also used two can of petite diced tomatoe and a whole bag of fresh baby spinach. I like lots of "sauce" on my pasta! This recipe is soooo healthy! I even used it for a recipe exchange amongst friends.

Dinah's Stuffed Mushrooms
I had high hopes for this, but it did not meet my expectations. I let it sit in the fridge for 24 hrs so the tastes would meld, but it didn't help. I only used about 1/3 the butter and I still thought my arteries were going to burst. I used the juice from the clams like suggested. However, the taste of the Italian Seasoning is WAAAAAY overwhelming. You could easily use half. Lemon Juice squeezed on top does help a bit, but man, cut down on the Italian Seasoning! I would not make this again without some adjustments.
