Two-Bean and Mango Salad

Easy and delicious. A little more creamer makes it even better. For a little twist, I added 1 cup of raspberry custard mix for "raspberry hot cocoa." Yum! This is the second year I've made this recipe and will continue doing so. Thanks so much for posting it.

Oatmeal Blueberry Muffins

Easy and delicious and moist! After adding a little more sugar (1/2 cup total), and we always use applesauce instead of oil when baking, my hubby and I loved these. Great the next day too, especially if you pop them into the toaster oven!

Cod with Italian Crumb Topping

Delicious and easy! I'm trying to find ways that I can actually like fish and this was a great start. I didn't have cornmeal and I sprinkled a little garlic salt on the fish before putting on the topping. I will definately make this again!
