I love this more simple recipe without so many add-ins. A friend sent me the in-oven instructions: Preheat oven to 250 degrees. Melt butter in large shallow roasting pan in oven. Remove. Stir in seasoned salt and Worcestershire. Gradually add cereal and nuts, mixing until all pieces are coated. Bake one hour, stirring every 15 minutes. Spread on absorbent paper to cool.

Meatball Nirvana

Love this recipe! Since my stomach cannot handle red pepper flakes, I added about 1 tsp. of fennel seed for an extra flavor kick. It turned out to be an excellent addition. Be sure to mix enough to distribute the seeds throughout.

Oven-Fried Catfish

I absolutely love this recipe. I love catfish but hate pan-frying it because I often scorch the breading. If you have a sensitive mouth like mine, cut the paprika and pepper in half, but leave the rest of the spices as they are. If you leave out the salt, you won't miss it.

Cream of Celery Soup

I recalculated the servings to 4, and made this soup, but did NOT discard the vegetables. Instead, I allowed the soup to cool to "warm," put it into a food processor and pureed the vegetables with the soup, then reheated to serve. This yields a richer flavor and was really wonderful!

Vern's Roasted Pork Loin Over Sauerkraut

My husband just made this for Sunday dinner. It is fantastic! Because my digestive system cannot tolerate whole cranberries, he substitued dried apricots snipped into berry-sized pieces.

Dry Onion Soup Mix

Be sure to use low-sodium bouillon granules. If you cannot find them, make the mix without bouillon granules and substitute low-sodium beef broth for any liquid in the recipe you are using.

Anise Drops

This is very similar to the Aniskuchen recipe in an old German cookbook I have. It has obviously been "Anglicized," and I'm glad to see it here. The original recipe calls for leaving the cookie trays set out for a couple of hours for partial drying, just as one leaves Springerle out to dry before baking. I'm glad of the tip about small eggs. Maybe that's why my results are inconsistent. Thanks.

Ham Salad II

If you make this using a blender or food processor, process only the ham, onion and celery. Chop the pepper by hand and mix the dressing by hand to mix into the processed meat and vegetables. I agree with another reviewer: leave out the salt! Cut it in half if you absolutley have to have it. The flavor is great!

Broccoli Supreme

I made this for our family Christmas dinner, and it was a hit, even with my youngest daughter's fella; he's a chef with Eddie Merlot's. I did substitute cream of celery soup for cream of mushroom simply because it was what I had on hand. Nor did I have any pimentos. This was a real hit!
