Banana Crumb Muffins

I followed the recipe as written. My only advice is to NOT use fake butter for the topping - it doesn't create a crumb, just a weird sugar shell thing. Fake butter in the batter doesn't seem to have any ill effects. These muffins are fluffy, moist, and very banana-y. You sometimes come across banana recipes that only sort of taste like banana, but these muffins are packed with banana flavor. I got exactly 12 muffins out of this recipe.

Sausage Stuffed Jalapenos

I should say first that my changes to the recipe only cater to true chili heads...it may make normal people cry. This is such a simple recipe, but the flavors are great. I didn't have any parm, but instead substituted organic cheddar. We like things extra spicy so I added 2 tablespoons cayenne to the pork sausage while sauteeing it. I was very willy-nilly with the peppers...left in a lot of ribs and seeds to keep it extra hot. Threw it all in the oven for 30 minutes at 375 degrees. It was great - the bottoms of the peppers were browned and roasted. Everyone who was over here watching the game enjoyed these. Nothin like a snack hot enough to get the snot and tears running!

Fresh Pear Crisp

This is good and easy as written. I did have a random apple lying around that I chopped up and threw in there. Also......very important.....throw in a couple pinches of salt. It brings out every flavor. Also.....I eye balled everything so I didn't have much clean up at all. Impossible to mess this up.

Pumpkin Bread IV

I thought 3 cups of pumpkin was kind of an awkward measure, so I cut the recipe by 2/3 to use exactly 1 15oz can for 2 loaves. I followed the recipe exactly, baked for 1 hour, and they turned out great. Leaving one at home, and taking the other into the office tomorrow.

Pineapple Cheesecake

Very easy and very tasty. I didn't have any crushed pineapple so I used a can of chunk pineapple...threw it in the food processor. It amounted to a very tiny amount of pineapple after I squeezed out all the water, so I used a second can of chunk pineapple thrown in the food processor. The key is to squeeze the pineapple so you have as little liquid as possible. It turned out great, and I made no changes to the recipe.

Banana Cream Pie I

This was really good, and I followed the recipe exactly. In the middle of making it, I was thinking to myself "I really wish I just used an instant pudding mix because this is a lot of work!" ...well, I ended up eating my words when the pie was all done. This is not your normal pudding, and definitely NOT the low quality that is instant pudding. It's a great custard with really great flavor. I will make this again to use up bananas.

No-Fuss Rice Pudding

This is a very easy and delicious recipe for using left over rice. Just one word of caution in reponse to the reviews I've been reading here - please do a google search on Splenda before using it regularly, and especially before feeding it to your kids. I'd rather have a few extra calories from sugar than lace my body with a sweetener made in a lab with unknown long term effects (and many proven negative short term effects). Thank you for the recipe.

PHILADELPHIA-OREO No-Bake Cheesecake

Delicious and easy recipe. For the crust, I used about 2 more tablespoons of butter for good no-crumble insurance. Hell, it's a recipe using over a pound of oreos and 2 pounds of fat laden cream cheese - no sense in skimping on ingredients :) I also used about 12 oz of whipped cream (cool wHip) to make it a little less dense. Again, very simple recipe that makes people think you did more work than it actually required.

Fast and Friendly Meatballs

I'm rating it 5 stars for a terrific base recipe. We used this recipe for some very hearty, flavorful meatball subs! I added the following: onion powder, 3 cloves of garlic, sage, oregano, salt. Made 36 mini-meatballs, baked for 20 minutes, broiled for 5 minutes. I then made some homemade marinara. Then just pile the meatballs into a french roll, top with marinara, and some mozzarella. Put underneath the broiler for 4 minutes. The entire family loved it. This is the best part - we spent about $3.50 to make 6 big meatball subs that were so much better than a restaurant's.

Blueberry Coffee Cake

I'm rating this 4 stars because I made some changes to the recipe, otherwise I would rate it lower. Despite the mistakes I made, it still tastes very good. I think it was my fault the cake turned out not-perfect since I doubled the recipe and baked it in a 9x13. I stuck in a toothpick at various times but it kept coming out undone, and I finally just turned off the oven at 1 hour 20 minutes. The result was a coffee cake done on the top and bottom, but the middle was like raw-ish cake texture. The next time I make this, I'll be sure to follow the recipe as-is and bake it in a 8x8...I think 9x13 may be too big to cook through.

Oven Fresh Seasoned Potato Wedges

Great seasonings in this recipe. I rated 4 stars because I made some changes - we boiled the potato wedges for 7 minutes before seasoning them and putting them in the oven for about 15 minutes. This makes for a great texture. It's mashed potatoey goodness inside, with a crispy outside. You cannot ask for anything more...great texture and less bake time with the par-boil technique.

Easy Corn Chowder II

This was a good recipe! I enjoyed it for what it is; a simple quick recipe. I think it's lacking some depth. Perhaps throwing some bacon in first and rendering before adding celery will help. Otherwise, very good recipe.

German Apple Cake II

I was in the mood for a good fall recipe when it started snowing for the first time this year in Iowa. This hit the spot; it was delicious. I had a lot of apples to use up, so I think I put in about 5-6 cups of apples. It still turned out well. Very flavorful and moist. The only change I made was: added about 1 t pumpkin spice, 1/2 t nutmeg.

Banana Bars

These are amazing. Everyone who has tried it really likes it! I think the frosting turned out to be more of a thicker glaze, but it's still incredibly good. To reiterate what other users have posted, the frosting is a necessity.

Old Fashioned Potato Salad

I think this wasn't the best I've ever had in life, but it was on-par with what they sell at the deli for a much higher price. I thought it just needed a little more salt than the recipe called for. I don't think I'll ever pay for the deli's potato salad again - I never knew how easy potato salad was to make!

Extra Easy Hummus

Great foundation recipe. The best part is, a 16 oz batch cost barely $1 for me to make - compare that to hummus that is sold at the grocery store, and the savings are huge. I added a teaspoon of sesame oil, 3 cloves of garlic, and 1/2 teaspoon of cayenne pepper. This turned out extremely flavorful, savory, and rich - and healthy. Thanks for providing the recipe.

Paul's Pumpkin Bars

Very good. I used 30oz pumpkin, 1/2 c oil, and added pumpkin pie spice. I also used a different cream cheese frosting recipe because I don't feel right using only 3oz of cream cheese in a 15x10 pumpkin bar.
