No Bake Peanut Butter Pie

Yummy! I used the lower fat/less sugar versions described in other reviews. Poured into two chocolate wafer crusts. Took both pies to church luncheon. Not a crumb was left.

Easy Morning Glory Muffins

Umm.....Yummy! I halved the recipe and afterward realized I forgot to add salt. As another reviewer suggested, I added applesauce instead of oil. Much healthier than the waffles I was planning to have this morning. Delicious!

Fudge-Nut Oatmeal Bars

These bars are rich and delicious. I used unsalted butter and 1/2 semi-sweet and 1/2 milk chocolate chips. Baked in a 9x13 pan. Took these to a family reunion. The only thing I brought home was a pan of crumbs.

Awesome and Easy Creamy Corn Casserole

I doubled this recipe, used Jiffy cornbread mix and added approximately 2 tablespoons of chopped onions. Great for a church potluck and enjoyed by everyone.

Restaurant-Style Potato Salad

Yummy! This is creamy and delicious. Used Splenda instead of sugar and didn't have carrots. Instead of pimentos, added 2 tablespoons of pimento cheese spread. Tasted great after 24 hours in the fridge. Thanks.

No Bake Sugar Free Cheese Cake

This is not a cheese cake. It doesn't have the creamy consistency or smooth, richness of cheesecake. I didn't care for the taste either. Will not make again.

Amish Breakfast Casserole

Made this for my Mom's Birthday breakfast and it was big hit. Was short a full pound of bacon, so added some cooked hot breakfast sausage also. As others suggested, increased eggs to 8. Mixed everything together and refrigerated in a covered bowl the night before. Baked in the morning and it was easy and delicious. Leftovers heated and tasted great. My family has requested this again soon.

Fabulous Fruit Salad II

Made this for my Mom's Birthday breakfast. I used Dannon light vanilla yogurt. I had the walnuts, but forgot to add them and it was still yummy. Refrigerated leftovers the next day were not as good even with the addition of a shot of lemon juice.

Eggplant -- Easy, Good and Tasty

DELICIOUS! Used one small eggplant and Olive Oil cooking spray instead of oil. Baked on one side 10 minutes and then turned and sprinkled with garlic powder and drizzled with Italian dressing. Baked 10 minutes, then topped with cheese and tomatoes. Next broiled for about 2 minutes. Parmesan cheese got a little hard. Will try again with Mozarella. Yummy either way.

Microwave Peanut Patties

Excellent. Made these at least a dozen times and always turn out great, even using salted peanuts. If you skip "beating until creamy" the candy will be grainy. I find it easier to pour hot candy mixture into cooking sprayed cookie sheet and break apart when cool. My step-father requests these all the time.

Glazed Fruit Bowl

Great summer salad. Guests had seconds and took some leftovers home. Cut recipe in half and still had a large bowl of fruit. Didn't have blueberries or honeydew, but I don't think it matters. Any fruit would be great. Used sugar free vanilla pudding and no one noticed. Still sweet and refreshing. Will be making again. Thanks

Surprise Tuna Salad

Made this tuna salad many times, as written and with whatever I have in the pantry. Tastes better sitting in the fridge for a while, but 24 hours is the max. Too long in the fridge and it becomes soggy and apples turn dark. Thanks for the recipe!

Peanut Butter and Banana Smoothie

This is a great smoothie - made many times, but I made several changes. I use sugar free honey, skim milk, and add 1/2 cup ice. I sometimes use baby food fruits to replace fresh in smoothies. Makes mixing easier too.

Slow Cooker Barbeque

Yummy! Baked in the oven instead of slow cooker. As others suggested, put half the sauce over the whole roast and then the other half after shredding the meat. Will definitely make again.

Sweet Baked Apples

Quick, easy and tasty. I used about a teaspoon of cinnamon. Used 2 Granny Smith and 1 red delicious, because thats all I had. Baking the apples is a nice twist to plain caramel apples.

Brunch Pizza Squares

Wonderful Recipe. I used canned Pillsbury garlic breadsticks, as I didn't have crescent rolls. The garlic taste was an extra added bonus. Before adding the sausage, I baked the crust alone for about 4 minutes. I added 1/2 teaspoon of cayenne to the egg mixture. YUMMY !

Twisted Chicken Salad with Tostadas

Quick and easy with great taste. Next time will probably use less mayo. Used prepared crunchy corn tostadas hot from oven. The tostadas really give the taste a kick. Will definitely be making again & again.

Migas II

I was looking for something different for breakfast and this is great. I didn't have corn oil, used canola. I cut the recipe in half and as others had suggested, I added a heaping tablespoon of hot picante sauce and topped with diced tomatoes. Without the sauce, it would have been bland to this Texans taste.

Truck-Stop Buttermilk Pancakes

I've been trying pancake recipes for >25 years trying to find the right one. This is it! I even changed it a bit by re-calculating it to serve 4 and substituted low fat butter, skim milk and Splenda instead of sugar. These were still fluffier and tasted better than any recipe I have ever used. Thanks, this one is definitely a keeper!

Nana-Nut Bread

I've been paying $2+ a slice for sugar free banana bread at *bucks. I doubled the recipe, used 1/2 wheat flour and added pecans instead of walnuts. I had to cover the center with foil after 45 min. and bake an additional 10 minutes, as others had suggested. Making my own coffee with this banana bread, I'll be able to take that cruise next year. Thanks!
