Mexican Corn Salad

I made this for my family along with some bean tacos. It was amazing! Everyone loved it. I used real fresh, sweet corn and cut off the kernels myself. Messy but so worth it. Canned corn will likely make this taste bland and boring. Go fresh! It makes it so sweet and crunchy, perfect for this salad! Gorgeous colors too!

Grilled Fish Tacos with Chipotle-Lime Dressing

WOW! This has to be one of the most rocking fish taco recipe ever! I made it to 9 servings for my family of 4 and barely had any leftovers! I used 1/4 tsp of cumin and 1/4 tsp chili powder since the youngest doesn't like spicy stuff. Otherwise, I followed the marinade exactly. Delicious. Will make this again. :)

Apple Pie by Grandma Ople

WOW. First time I have ever made homemade pie and this was awesome! I was slightly worried because there was no call for cinnamon and as the mixture was simmering, it started to separate but I trudged on and poured it over my apples in hopes that the heat from the oven would spread it out more, and it did. I did not do a lattice crust and simply poured it over my apples and put on a plain crust on top of it all. No regrets! My family ate the whole thing up. Will make this again. :)

Pie Crust I

First time I have ever made a pie crust from scratch. The crust was almost like a bread-y cracker, if that makes sense! lol Followed the recipe to a T and it is ESSENTIAL to mix the water one tablespoon at a time and wait until its fully incorporated before adding the next. I put it on my pie plate and let it sit in the fridge while I worked on my filling. Will use this recipe again!
