Black Bean and Wild Rice Salad

A pound of wild rice is expensive, let alone already cooked! Made this a while back & cooked my own mixture of brown rice with wild rice. Worked just fine, tasted great. And people, stop substituting dried herbs for fresh! So easy to grow a little pot of something fresh indoors.

Herbed Rice and Spicy Black Bean Salad

Reminded me of an old Hopping John salad I used to make in the 70s, with black-eyed peas. And who in the world would think of substituting dried cilantro for fresh? Do they even sell dried cilantro?? Cilantro is one of my favorite herbs because of its distinctive flavor. It makes this recipe. If you don't have fresh cilantro on hand, then don't make this; make something else.

Potato and Onion Soup

Why use margarine in ANYTHING? Potato soup is rich & creamy because of butter! Margarine tastes terrible and is made of unhealthy oils. If you want to cut out a little fat, use whole milk, half & half, part evaporated milk, a little yogurt or sour cream, etc. in place of heavy whipping cream. You'll still get the creaminess, and much better flavor. And they must have used 2 REALLY GIANT RED POTATOES. No indication of size in this recipe. I found instructions in many recipes on this site lacking.

Japanese Onion Soup

Dried Shitake mushrooms have so much more flavor/more bang for the buck. I always use dried. I think great results have a lot to do with your water source, too. Chlorine is going to adversely affect any recipe, especially soups which are mostly water. Water purifier right on (or under) the sink is best, or buy triple-osmosis filtered water, or just use the pitcher kind. (When using dried mushrooms you must rehydrate first, cut off the hard stem.)
