About this Cook
I am a graduate of LCB Orlando, I have two daughters and am expecting my third surprise in March. I am trying to establish my own company called Saucy Catering. I love to learn about everything but I take pride in personalized gifts. I want to become a Chef that will hire people with little to no experience and help them gain a trait to make a career and better their lives. I also want to have a non profit that will help people with eating disorders, weight loss or gain to educate them on food and the value of FRESH, flavorful food that doesn't have to be "fattening". I want to do it all & have fun doing it. In the end I want to travel the world trying new cuisines and creating my own culinary form. I love FRESH & SEASONAL foods, I think it builds character to live off the "seasonal land".
My favorite things to cook
Fresh, light & comfort foods & desserts
My favorite family cooking traditions
lazanga & Coquito (a spanish egg knog)
My cooking triumphs
Learning how to make Patachou.. it's a french pastry puff. It's so complicated but makes for a nice swan!
My cooking tragedies
to many.. THAT'S HOW YOU LEARN!!!

Indian Fish Curry
SO amazingly flavorful! I paired it with cauliflower cilantro & lemon "rice" and it was just a beautiful dish. I do paleo so I substituted agave for sugar and it was just amazing. I also don't use canola oil so I just used coconut oil and olive oil. I tossed in veggies (carrots, radishes & broccoli) while the fish cooked and everything melted together! I also just used one tsp of cayenne and it was perfect. Easy to adapt & eat. Love how low cal, carb & sugar it is but high in protein! (I'm working on the salt part).. Thanks for a wonderful recipe

Grilled Salmon I
so simple, so amazingly tasty! I used low sodium soy sauce to cut back the salt intake. I tried it with thick boneless pork chops & it was MORE amazing. I added one full Thai chilli for some kick & my husband went crazy for it. Next I'm going to try it with stir fry & steamed rice.. so many options!

Chicken with Garlic, Basil, and Parsley
I had chicken marinating from the night before in oil, lime, s & p when I came across this recipe. I decided to butterfly the chicken and add the seasoning. It was amazing! I think it would have been great anyway but I feel the lime marinade made the flavors POP. This is on my "save" list!
