Javi's Really Real Mexican Ceviche
This was delicious. The shrimp weren't fully opaque after nearly two hours, so I cut them in half--I'll start the process that way next time. Regardless of any substitutions for the seafood, be sure that you add enough lime juice to fully cover it for food safety. This is great with avocado chunks added at the end.

Ultimate Chocolate Dessert
This is incredible! I first made it with cayenne for an amazing little bit of heat after the initial rich chocolate flavor. Everyone I've made it for had requested it again and again--even friends who aren't dessert people. This is the best dessert I've ever had. Looks fancy yet is very simple.

Florentines I
Since I made them for a family member with diabetes, I substituted Splenda brown sugar instead of regular, at half the volume. Otherwise I followed the recipe exactly. They turned out as a puffy soft cookie, not a crispy wafer. Not sure if it's the Splenda or the recipe, but I see most other Florentine recipes include almonds and heavy cream...
