Shortbread Crust

This is my go to shortbread recipe. I bake mine in a springform pan so it comes out cleanly. I have also baked it on sheet pans when I do a double recipe. I make a great dessert that layers crumbled shortbread, vanilla pudding, fresh berried and whipped cream. DELICIOUS!

Easiest Peanut Butter Fudge

Easy and very good. I stirred in semi sweet chocolate chips when it was slightly cooled which added a nice chocolate swirl. This made a nice item for holiday gifts.

Texas Sheet Cake V

So good. Rich and chocolatey. I baked mine in a sheet pan and got nice frosting to cake ratio. Very good the next day as well. A huge hit in my family and neighborhood (gotta share those calories).

This was very good! I also decreased the eggs. I made it for 8 servings and used six eggs. I also added sliced button mushrooms. Thanks for a terrific and authentic tasting recipe.

Taco Soup III

I added 2 cans of chicken broth in place of the water. I used one can of chili tomatoes and one larger can of diced tomatoes. To punch up the flavor I added one beef bullion cube as well as a little extra ranch mix and taco mix. I also added a can of black beans in addition to the kidney beans (both drained and rinsed). I served mine with Tostitos Tortilla Chips with a hint of lime. My family LOVED it!! Fast, easy and very flavorful.

Glazed Meatloaf II

I forgot to add the minced onions. I substituted italian bread crumbs for the bread and added garlic and a healthy squirt of ketchup to my meat mixture. I also added a couple of tablespoons of milk to get the consistency I wanted to form the loaf. My family loved it and it heated up nicely for lunch today too!

Peanut Butter Sheet Cake

Garden Tomato Salsa

So good. We eliminated the bell peppers and substituted a chipotle pepper in adobo sauce. Also added a bit more lime juice and salt. Great bright flavor with a smokey note from the chipotle.

Sophie's Zucchini Bread

Moist, tasty, easy. You should spray or grease the loaf pans before baking though. Also I substituted chopped pecans for the walnuts, which I really liked. The best zucchini bread recipe I've ever made.

Easy to make, yummy and nice looking when done. I topped mine with chopped pecans and used the brown sugar recommended by another reviewer. People were suprised when I told them it contained saltines!

Classic Waffles

Very easy and tasty recipe. I did one and a half of this recipe to make enough for my hungry family. I added fresh blueberries to the batter too. I also increased the sugar by one tablespoon to help the crunch of the waffles. We served ours with homemade whipped cream and fresh berries. YUMMM!!

Bacon and Tomato Cups

These were a huge hit at my party. Especially good hot. The recipe makes too much filling though. I used both butter recipe biscuit and regular(pilsbury), and I think the butter was a bit flakier and came out more golden brown. This was a crowd pleaser. I wasn't able to make most of the biscuits split into less than thirds, but didn't have a problem with doughiness. I cooked them a bit longer.

Artichoke and Roasted Red Pepper Dip

I made this for a cocktail party and it was a huge hit. People asked for the recipe and it was gone rather quickly. I served it with thin baguette slices and crackers. I agree that it looks kind of ugly, I think I will work on more attractive presentation when I make it again this weekend.

Simple Carnitas

I've made this several times and my family and friends LOVE it! I always use at least a 5 lb roast to get tons of payoff for the work and time involved. I sear my chunks of roast in a hot pan before adding to a crockpot and cook for ~7 hours. Meat is always fall apart tender and so delicious. My newest innovation is to use the carnitas meat in tamales. AMAZING!

Great on flank steak! Brought it to a BBQ with rave reviews. I grilled an extra steak to slice up cold later in the week over an Asian style salad. Delicious hot or cold!!!
