Artichoke and Roasted Red Pepper Dip

Reviewed: Mar. 24, 2003
I made this for a cocktail party and it was a huge hit. People asked for the recipe and it was gone rather quickly. I served it with thin baguette slices and crackers. I agree that it looks kind of ugly, I think I will work on more attractive presentation when I make it again this weekend.

Easy Roasted Peppers

Reviewed: Apr. 1, 2003
This recipe was very easy and the peppers came out great! I used some of them in the hot artichoke and roasted red pepper dip recipe I found on this site. That too is a huge hit at parties! The rest went into yummy sandwiches.

Cheesy Breads

Reviewed: Apr. 1, 2003
This was good, although a bit salty. I also used 1/2 the ranch mix and less mayo as suggested by others. I prepared it in advance and was able to keep it in the fridge for a few hours before my party. It tastes best hot!

Bacon and Tomato Cups

Reviewed: Apr. 1, 2003
These were a huge hit at my party. Especially good hot. The recipe makes too much filling though. I used both butter recipe biscuit and regular(pilsbury), and I think the butter was a bit flakier and came out more golden brown. This was a crowd pleaser. I wasn't able to make most of the biscuits split into less than thirds, but didn't have a problem with doughiness. I cooked them a bit longer.

Broccoli Salad I

Reviewed: Jun. 11, 2003
This was a hit at my neighborhood potluck. The texture remained good even after sitting on ice the whole afternoon. Several people asked for the recipe. I have had a better broccoli salad that had cranberries in it.

Cracker Candy

Easy to make, yummy and nice looking when done. I topped mine with chopped pecans and used the brown sugar recommended by another reviewer. People were suprised when I told them it contained saltines!

Black Bean and Corn Salad II

Reviewed: Jul. 20, 2003
This is a delicious summer side dish. I took the advice of others and switched the oil and lime juice proportions. I also added a peeled cubed cucumber, black pepper, 1/2 C more corn (frozen white)and a second avocado. It was a hit at a party last weekend and I made it again tonight to rave reviews. It is also great eaten with blue corn chips.

Sophie's Zucchini Bread

Reviewed: Jul. 20, 2003
Moist, tasty, easy. You should spray or grease the loaf pans before baking though. Also I substituted chopped pecans for the walnuts, which I really liked. The best zucchini bread recipe I've ever made.

This was very good! I also decreased the eggs. I made it for 8 servings and used six eggs. I also added sliced button mushrooms. Thanks for a terrific and authentic tasting recipe.

Baked Scalloped Potatoes

Reviewed: Dec. 27, 2006
I layered the cheese and soup/milk mixture several times and sliced the potatoes quite thin. It still took over 90 minutes to bake to the doneness I wanted. I did double this recipe, so that could affect cooking time. I also seasoned my dish a bit more with pepper and garlic. This is a great side dish for a holiday ham.

Easy and very good. I stirred in semi sweet chocolate chips when it was slightly cooled which added a nice chocolate swirl. This made a nice item for holiday gifts.

Ruby Red Layered Salad

I am not a jello fan and I LOVE this dish. The sour cream is very important in making it creamy and rich. I saw Paula Deen make a similar dish on her show and she said it is her favorite dish. Mine too!
