Simple Carnitas

I've made this several times and my family and friends LOVE it! I always use at least a 5 lb roast to get tons of payoff for the work and time involved. I sear my chunks of roast in a hot pan before adding to a crockpot and cook for ~7 hours. Meat is always fall apart tender and so delicious. My newest innovation is to use the carnitas meat in tamales. AMAZING!

Caramels

Alfredo Sauce

Made so many changes, my review is a bit skewed. Used Kraft Parmesan, so it could be tons better with quality stuff. Added the pepper, garlic, and cream cheese reccomended by others as well as a roux since I added 1/2&1/2 instead of heavy cream. Ironically I did have freshly grated nutmeg :) Served with store bought tortellini and broccoli. Great fast family dinner with what I had on hand.

Taco Soup III

I added 2 cans of chicken broth in place of the water. I used one can of chili tomatoes and one larger can of diced tomatoes. To punch up the flavor I added one beef bullion cube as well as a little extra ranch mix and taco mix. I also added a can of black beans in addition to the kidney beans (both drained and rinsed). I served mine with Tostitos Tortilla Chips with a hint of lime. My family LOVED it!! Fast, easy and very flavorful.

Apple Fritters I

I tried the suggestion of cooking the diced apples in the micowavefor 4 mins. I increased the sugar to 1/3 C and added more cinnamon (1 heaping t), a dash of pumpkin pie spice. I fried these up for my husband and he LOVED them. I feel like I need to play with the spice ratio a bit more to give it a 5 but a very strong 4 recipe. Thanks!

Classic Waffles

Very easy and tasty recipe. I did one and a half of this recipe to make enough for my hungry family. I added fresh blueberries to the batter too. I also increased the sugar by one tablespoon to help the crunch of the waffles. We served ours with homemade whipped cream and fresh berries. YUMMM!!

Shortbread Crust

This is my go to shortbread recipe. I bake mine in a springform pan so it comes out cleanly. I have also baked it on sheet pans when I do a double recipe. I make a great dessert that layers crumbled shortbread, vanilla pudding, fresh berried and whipped cream. DELICIOUS!

Glazed Meatloaf II

I forgot to add the minced onions. I substituted italian bread crumbs for the bread and added garlic and a healthy squirt of ketchup to my meat mixture. I also added a couple of tablespoons of milk to get the consistency I wanted to form the loaf. My family loved it and it heated up nicely for lunch today too!

Texas Sheet Cake V

So good. Rich and chocolatey. I baked mine in a sheet pan and got nice frosting to cake ratio. Very good the next day as well. A huge hit in my family and neighborhood (gotta share those calories).

Cheese and Broccoli Chicken Soup

Four stars for my version that came out a little salty (I added more bullion) but quite good. I will stick with this recipe and tweak it a bit more to perfect it, but a great basic recipe. I added diced ham (instead of chicken),and a small onion sauted in butter. I also added three small potatoes that I cubed and cooked in the chicken broth before adding other ingredients. I served it with refridgerator dough breadsticks for a warm dinner on a cold and windy night.

Garden Tomato Salsa

So good. We eliminated the bell peppers and substituted a chipotle pepper in adobo sauce. Also added a bit more lime juice and salt. Great bright flavor with a smokey note from the chipotle.

Korean Marinade

Great on flank steak! Brought it to a BBQ with rave reviews. I grilled an extra steak to slice up cold later in the week over an Asian style salad. Delicious hot or cold!!!

Ruby Red Layered Salad

I am not a jello fan and I LOVE this dish. The sour cream is very important in making it creamy and rich. I saw Paula Deen make a similar dish on her show and she said it is her favorite dish. Mine too!

Easiest Peanut Butter Fudge

Easy and very good. I stirred in semi sweet chocolate chips when it was slightly cooled which added a nice chocolate swirl. This made a nice item for holiday gifts.

Baked Scalloped Potatoes

I layered the cheese and soup/milk mixture several times and sliced the potatoes quite thin. It still took over 90 minutes to bake to the doneness I wanted. I did double this recipe, so that could affect cooking time. I also seasoned my dish a bit more with pepper and garlic. This is a great side dish for a holiday ham.
