About this Cook
I am a SAHM of four kids. I love cooking, trying new recipes, reading cookbooks and watching cooking shows. I know what flavors I like and love playing with them to create delicious foods. We are a busy household with sports every season, and lots of school and extra curricular activites. This means I am often looking for meals that I can make quickly (or in my crockpot)that are still nutritious, satifying and tasty.
My favorite things to cook
I love to cook flavorful ethnic foods. I also enjoy making desserts. I love fresh fruit pies, tarts and jams in season and pies, cakes and cookies in the colder months. I enjoy grilling (veggies,steaks, salmon)on our new gas BBQ. Sorry charcoal fans...
My favorite family cooking traditions
Our Thanksgiving turkey dinner is a favorite tradition. All the baking, cooking and preparations in anticipation of the day as well as the delicious final product are treasured memories. There are always a few moments of excitement and at times hilarity when I move the turkey (with the help of my hubby) from the roasting pan to the platter. A few times we have had "situations" that required a bit of turkey plastic surgery( and carefully arranged garnish), but looking back I almost like those best. Each year, on my children's birthdays I cook a meal of their choice for dinner served on a birthday plate I painted for them. We spend days in advance planning and shopping for the special meal which is a big part of the fun.
My cooking triumphs
I baked a delicious and beautiful cake for my best friend's baby shower. Not only did she love it, other friends have asked for it for their showers.
My cooking tragedies
I have quite a few cooking tragedies. One year I forgot to put sugar in the pumpkin pie I baked for thanksgiving. I have yet to live that one down. My family lovingly refers to it as diet pie. When I was a newlywed on a tight budget, I made a chicken casserole for dinner using cream of broccoli soup as a main ingredient. It looked, smelled and tasted terrible! It is the only meal my husband has refused to eat in our entire marriage.

Simple Carnitas
I've made this several times and my family and friends LOVE it! I always use at least a 5 lb roast to get tons of payoff for the work and time involved. I sear my chunks of roast in a hot pan before adding to a crockpot and cook for ~7 hours. Meat is always fall apart tender and so delicious. My newest innovation is to use the carnitas meat in tamales. AMAZING!

I have been using this recipe since 2002 and have always had success with it. I give these caramels away as Xmas gifts and every year I get rave reviews.

Alfredo Sauce
Made so many changes, my review is a bit skewed. Used Kraft Parmesan, so it could be tons better with quality stuff. Added the pepper, garlic, and cream cheese reccomended by others as well as a roux since I added 1/2&1/2 instead of heavy cream. Ironically I did have freshly grated nutmeg :) Served with store bought tortellini and broccoli. Great fast family dinner with what I had on hand.
