Double Ranch Fries

These hardly made it to the table. We have a pizza place that makes potatoes similar to these and we love them. Now I have a recipe I can modify to be more like the ones we love so well. We dipped ours in ranch. If you like them crispy, slice extra thin. Also the ranch/garlic dip was not enough for my 3 large potatoes. Have extra ranch mix on hand, or use smaller potatoes.

Zucchini Oatmeal Waffles

These had the slightest zucchini bread taste. I served them with buttermilk syrup, but they would be great with maple as well. Next time I'll up the cinnamon for more of that zucchini bread flavor. I used whole wheat pastry flour for a more tender texture. This recipe makes 4 belgian waffles (4 cups batter).

Mashed Potato Layer Bake

I usually make this for Thanksgiving & am now putting it on the Easter menu. Took this to a potluck at Christmas and it was a hit. When asked what the ingredients were, a couple people who don't like sweet potatoes said they had gone for seconds, thinking the sweet potatoes were white potatoes mixed with cheese.

Chewy Chocolate Chip Oatmeal Cookies

This is the best cookie! It will replace my Mrs. Fields recipe. I did take advice of other reviewers, I changed flour amount to 1 3/4 cups, baking soda to 1 tsp. and salt to 1/2 tsp. Just be prepared to share these cookies if you don't have good self control. Happy eating!

Buttermilk Pancakes I

My family LOVED these, my 8yo son said I should put this recipe on the internet so other people can make them ;). My daughter who loves sugary foods ate these without syrup. They are that good. I did add a pinch of salt and splash of vanilla as recommended by others. The first few pancakes I flipped when they were almost too soft to flip, and those are the ones I liked the best. ENJOY!!

Cheddar Baked Chicken

I made this for company, it was great. I used 6 skinless, boneless breasts (abt 2 lbs), and had to add an extra egg. I had very little of the flour & breading mixtures left. The cereal stuck to the chicken just fine & gave a nice texture. I used cheddar jack cheese blend (all I had), and would add Parmesan next time for a little extra something.
