Zucchini Oatmeal Waffles
These had the slightest zucchini bread taste. I served them with buttermilk syrup, but they would be great with maple as well. Next time I'll up the cinnamon for more of that zucchini bread flavor. I used whole wheat pastry flour for a more tender texture. This recipe makes 4 belgian waffles (4 cups batter).

Buttermilk Pancakes I
My family LOVED these, my 8yo son said I should put this recipe on the internet so other people can make them ;). My daughter who loves sugary foods ate these without syrup. They are that good. I did add a pinch of salt and splash of vanilla as recommended by others. The first few pancakes I flipped when they were almost too soft to flip, and those are the ones I liked the best. ENJOY!!

Double Ranch Fries
These hardly made it to the table. We have a pizza place that makes potatoes similar to these and we love them. Now I have a recipe I can modify to be more like the ones we love so well. We dipped ours in ranch. If you like them crispy, slice extra thin. Also the ranch/garlic dip was not enough for my 3 large potatoes. Have extra ranch mix on hand, or use smaller potatoes.
