Sour Cream Chocolate Chip Cake II

Couple of substitutions/additions: 1. Used Chobani plain nonfat greek yogurt rather than sour cream. I use that substitution quite a bit to good effect. 2. Couldn't bare the thought of a vanilla looking cake so added a 1/4 cup of unsweetened cocoa powder. Voila! Chocolate cake. 3. Added some instant coffee. About 1/8 cup, for additional flavor. 4. Did not do the streusel mixture at all. Frosting, which I did not make, may be overkill.

Cranberry Sauce

I did alter it a bit, however. Used 3/4 cup sugar rather than 1 full cup. Used a cup of water rather than a cup of orange juice. Added the processed fruit of one large navel orange, and the processed peel of 1/4 of that same orange. The orange fruit adds back flavor, the peel adds a bit of bite and consistency. Once the cranberries started popping, I used a handheld processor to blend the mix right in the pan. Then simmered for another 15 minutes or so so that the mixture cooked down. My wife, who despises cranberry sauce, loved it! As did my daughter, and me, too. We all plan to use it on the turkey.

Yuca French Fries

Here are some alternatives: 1. Prior to frying, pressure cook the yuca fries for about 4-5 minutes on high pressure. Pressure cook as you would cut potatoes. 2. We used the entire yuca tuber (after peeling), including the core and it was just fine!

Oatmeal Raisin Cookies VI

My first couple of batches were LOUSY. They tasted excellent, but they were quite brittle and thin. A couple fell apart. I realized the problem: the recipe doesn't have enough flour. I added an additional 1 1/2 cups of whole wheat flour, and they tasted great! These are yummy cookies, just make sure you include the extra flour.
