Chef John's Boston Baked Beans

I made a couple alterations. One was accidental. I accidentally cooked the beans completely before baking for one hour. I doubled the recipe. I used salt pork instead of bacon (diced and fried.) It was fabulous!

Poor Man's Frosting

This is one my mom used to make. Velvety. I recommend you cover the paste while it cools so it doesn't form a skin.... it will be lumpy if it skins.

Pasta Fagioli

I made so many changes since I didnt have all the ingredients handy but it was fabulous. Broccoli for spinach, cooked steal cut oats for white beans, cooked pasta from a tomato dinner the previous night and I didnt have any celery. Husband was sick and wanted a quick batch of soup but I couldnt get to store but he loved the franken-version of this recipe.

Panang Curry with Chicken

This was great! I used lime zest and juice instead of kaffir leaves and brown sugar for palm sugar. I was afraid it wasn't going to taste like at the restaurant but once the fish sauce went it it was just the same!
