Italian Sausage, Peppers, and Onions

Needed more sauce. I used about 1/2 cup white wine and 1/2 cup of chicken stock. Simmered and served with a crusty bread. Delish!

Chocolate Pretzel Rings

So simple! I also used rolos as an extra special treat. Had a hard time finding round pretzels so used the waffle ones and they were perfect. Thanks for reminding me about this great recipe.

Uglies

Whole family loved it! Little time consuming to fill all of the muffin cups with the rolled out biscuit but well worth it! I used the jumbo flaky biscuits in the 16 oz can. Had enough for left overs!

Spinach and Mushroom Quesadillas

These were SO good. Sauteed fresh spinach, garlic and portobellas all together. Montery jack is a great cheese for these - nice and mild - does not overpower the mushroom / spinach. No baking required. Just stuff the mixture and fry on a griddle until melted and browned.

Chicken Cordon Bleu II

I think this is my families favorite meal! Pounded to even thickness. Used panko breadcrumbs vs. flour. It browns up so nice in the butter. I used a large cast iron skillet for both browning and simmering. They turn out nice tender and juicy. Delish!!

Corn Fritters

These were delish! They are supposed to be sweet not salty. I did go with butter vs. shortening and 1 t. of sugar with powdered sugar dusted on top after they drained on the paper towel. If anyone has ever had the corn fritters at White Fence Farm these are as close as you can get! Very easy too!

Roquefort Pear Salad

This was a perfect start to our Christmas dinner! YUMMY!! Everything was perfect. I would not leave out the avocado as many suggested, I really thought that pulled it all together. I did sub Gorgonzola for the Roquefort because my hubby is not a huge Blue Cheese fan. He LOVED it! The dressing was just delicious. Perfect amount for the 2 bags of baby spring mix that I used. I used a high quality olive oil that was infused with garlic and I can tell you everyone was licking their plates. Thanks for such a great salad.

Garlic Red Potatoes

Loved the flavor but had to adjust cook time. Had to crank the heat (425) the last 15 minutes of cook time and broil for 5 minutes to brown. Next time I will start off with a higher temp.

Kielbasa and Cabbage

My DH asked for this for his birthday meal! I browned the sausage first in the drippings and think this made a big difference. Added cabbage for only the last few minutes so it didn't get too mushy. I also did not have caraway seed, I didn't miss it.

Shrimp Lemon Pepper Linguini

Fantastic! Loved ever drop of this sauce. Great light meal. I made extra sauce and used 1 1/2 lbs. of shrimp - great for a family of 4 with left overs! Make sure you have plenty of crusty bread to soak up all the juice.
