English Muffins

I'm giving 4 stars because this is a first attempt at English Muffins, so I haven't enough experience to discredit the recipe. It wasn't easy using a griddle, some got too dark and others didn't seem done in the middle. If I try again, I think I'll use an electric griddle, hoping for a more consistent temperature. Although it was an easy dough to work with, to cut out, etc., I think it was too dense, too much flour.

Homemade Flour Tortillas

I used this recipe as a first for making tortillas. The dough worked up fine, I used some margarine as I thought it would add more flavor than shortening. They were easy to roll out, and cook, but flavor seemed lacking. I am going to try the Authentic Mexican Tortillas on this site next--the percentage of fat to flour is quite a bit higher, and I actually rendered some backfat lard and think I will use that.

Sopapilla Cheesecake Dessert

I had 2 tubes of crescent dough I wanted to use up, and had been browsing through Pillsbury's site looking for a recipe. I came across this one by accident because it was featured in an Allrecipes daily email, and voila! Crescent dough! It is really too good--my husband couldn't keep his hands off of it, and actually asked if I was trying to kill him. I do have a cookbook, "How to Kill Your Husband", and it has all these really rich recipes. LOL I did add 1 egg to the filling as one person suggested, as most cheesecakes do have eggs.

Jalapeno Cranberry Sauce

This was a nice change from the typical cranberry sauce. The post Thanksgiving sandwich with turkey, stuffing and cranberry sauce would get a boost with this version I think. Thanks.

Amy's Cilantro Cream Sauce

This was very tasty. Nice dip or salad dressing. I didn't have enough cream cheese, so actually I more or less reversed the amounts of cream cheese and sour cream. It was really good that way, and next time I'll try it as written. Thanks.

Grandmother's Buttermilk Cornbread

Crispy and Creamy Doughnuts

These came out very good. I mixed and kneaded with my Kitchenaid, only adding an extra 1/4 cup of flour. I used a deep fryer, keeping the temperature more like 360*. Homemade doughnuts are not something that "keeps"--they're best eaten within hours.

Cinnamon Rolls III

These were a big hit. Very easy with the bread machine, and an easy dough to work with. I am not not really fond of the cream cheese icing, I prefer just a simple glaze. Thank you.

Asparagus Quiche

I made this for Easter brunch. It was good with the asparagus. The filling amount, though, was way too little for 2 pies. I should have used the whole amount in one deep 9 or 10 inch pie crust.

Fired Up Southwest Fajitas

I used this recipe with chicken, boneless breasts I cut into strips. I also used more onions and peppers, at least double the amount. It came out very good.

Mushroom Stuffed Chicken Rollups

These were quite good. I followed some of Michelleca's notes, and made duxelle, with garlic and wine. I'm not sure that I'd make these again; what with pounding the chicken, and the rolling, it is rather time consuming. With that much invested, I want something I am more impressed with.

Gooey Brownies with Shortbread Crust

These were easy to make and very good. The shortbread adds a less sweet, and crispy contrast. My son thought they were the best brownies, even though I opted to leave the nuts in.
