Meatball Grinders with a Yummy Sauce

Wonderful recipe! I used pepper jelly instead of apple jelly because I had some leftover from the holidays. Based on the other reviews that indicated this made a lot of sauce, I used a full bag of frozen, Italian meatballs, so this made at least 3 meals! The sauce got better and better each time we had it. Kids & hubby loved it! Made the sauce, then put it all in the crockpot to cook on slow all day. So easy!

Chicken with Quinoa and Veggies

My family LOVED this...even the little ones! I followed the recipe exactly except used crumbled goat cheese instead of feta (I am just not a huge fan of feta). It was delicious! You can easily substitute other meats, tofu, and any combination of vegetables, and it will still be wonderful!

The Best Bean and Ham Soup

My entire family loved this soup! It was quite different from traditional ham and beans and gets even better with time. Didn't know what to do with the spice packet from the package of 15-bean soup, though! Was it supposed to go in this recipe?

Braised Balsamic Chicken

My entire family LOVED this...kids included! Very flavorful and easy to prepare (I did use 1/4 cup of balsalmic vinegar and 1/4 cup of chicken broth as others have mentioned). Will definitely make this again and again! Thank you!

Slow-Cooker Corned Beef and Cabbage

Made this today for St. Patrick's Day, and it was FABULOUS! I cooked everything but the cabbage on low for 10 hours due to work, then added the cabbage the last hour. Everything was cooked properly without being mushy, and the beer added a nice flavor! Wonderful recipe!

Easiest Applesauce Cake

Very moist and delicious! I baked the entire batter in a bundt cake pan, then served it drizzled with warm carmel sauce. It was fabulous! The cake is terrific alone...but adding a bit of carmel sauce (for ice cream) made it out of this world!

Simple Baked Apples

This was delicious with pork chops! I followed the recipe exactly as written, but microwaved them for about 10 minutes instead of baking for an hour (didn't have enough time to bake them when I got home from work). My family loved them...said it tasted like apple pie filling without the crust! Would be good with almonds or pecans instead of walnuts!

Yellow Squash Casserole

This was FABULOUS! I thought it might be bland, but I had yellow squash to use up, so I gave it a try. My family of picky eaters had seconds and thirds! It was great even cold the next morning for breakfast - LOL! I used whole grain Ritz crackers. Next time, I might make it with zuchini just to give it some color. AWESOME casserole!

Special K Cookies

I also used the Special K with chocolate, and these were a big hit with my family! Very quick and easy to make, which is a huge bonus in our busy lives. Also great for younger cookie-makers who maybe can't use the oven unsupervised.

Wilted Spinach

Whole Wheat Ginger Snaps

These are very good! I didn't have molasses, so I substituted maple syrup as suggested by the contributor of this recipe. I also substituted brown sugar for the white sugar in the recipe to make sure it had a good "molasses" flavor. I dipped them in holiday green and red sugar to be more festive! Very soft, very good! Would definitely make them again : )

Turkish Red Lentil 'Bride' Soup

Green Salad with Dried Mint

This salad was very flavorful, and the leftovers did not get soggy after sitting in the fridge for a day or two. If you don't care for mint, dried basil would be a great substitute. This recipe made a lot - 2 dinner salads for my family of 5, plus 2 lunches for me!
