Coconut Shrimp I

These were really good! I used low fat coconut milk instead of beer in the batter and then pan fried the shrimp instead of deep frying. I dipped them in a sweet chili sauce which was also really good. The only caveat was that if I had not used the dipping sauce, I feel like the shrimp would have needed a little something extra in them, maybe something to add a little kick. I will definitely be making these again!

Banana Cake VI

This was an exceptional banana cake. The only change I made to the recipe was not using lemon juice because I didn't have any on-hand. I ended up cooking the batter in 2 8x11 pans, and had plenty of batter to make a double layer cake. They ended up cooking about 1hr 10 mins instead of the 1hr from the recipe probably because it was thicker. Overall, a really easy recipe to follow and turned out fantastic!

Old Fashioned Coconut Cream Pie

The recipe was decent, but not my favorite pie. I followed other people's advice and used corn starch instead of flour and also used coconut milk. I let it cook for about 25 mins, until it got really thick. Then it seemed kind of starchy in terms of the flavor. I might try again and use less corn starch and add back in some flour next time.

White Layer Cake

This was a very easy cake to make. I made 23 cupcakes out of the batter. Similar to another reviewer, instead of the buttermilk I substituted 1/3 C milk and 1 C sour cream. I also used cake flour instead of all-purpose. The cupcakes turned out light and airy, but the only downside was they didn't rise quite as high as I was hoping for. The flavor was pretty good though!

Fluffy Pancakes

Cinnamon Raisin Bread I

I made this bread last night and it was pretty easy and very tasty. The only thing I would change would be to roll the raisins up with the cinnamon sugar instead of putting them straight into the dough. I cooked mine for 40 mins, covering with foil after 20 mins to keep the top from burning.

It is a nice tasting cookie and easy to make. However, if you are looking for a recipe using cookie cutters, I would keep looking. The picture is misleading.

Clone of a Cinnabon

These were very easy to make with my kitchenaid bread hook. It took a little over an hour to rise the first time, and about 40 minutes the second time. I had just the right amount of filling and frosting so I wouldn't make any changes to those, and I used butter instead of margerine and it worked great.

Pumpkin Roll I

This recipe was very easy, and one of the best cakes I've ever made. I was worried about rolling up the cake in a towel and getting fuzz on it so I used wax paper which worked very well. I've already gotten a few requests for the recipe!

Pumpkin Cheesecake II

This cheesecake was pretty easy to make and the crust is one of the best I've had. I felt like the finished product was a little too spicy so next time I will substitute the mace with nutmeg. Everyone who tried it loved it!

Chocolate Lover's Cheesecake
