Winter Energy Cookies

We loved this, including the kids(age 3 & 6). I did have to make some substitutions & it is well suited for some lightening up using some light margaring/apple sauce & egg beaters - the peanut butter ensures it doesn't get get a styrofoam texture using too many light ingredented. Subbed honey for molasses & fiber 1 cereal for wheat germ based on what I had on hand.

Pasties II

yum! I cheated & used pre-made pie crusts, but these were great. My kids & husband liked them & it's not usual that I find something everyone likes! We served with either ketchup or beef gravy & I used a mix of red & yellow potatoes.

Irish Cream Truffle Fudge

This recipe is great! I make it for our church bake sale & it sells out quick. One note - gave the recipe to someone who isn't familiar with liquor & she used Irish Whiskey -- talk about pure alcohol flavor!

Best Breakfast Cookie

I've been looking for a home made version of granola bars for my kids & this is it! These were surprisingly good, although I had to tweak the recipe with what I had on-hand - dried cherries in place of raisins, almonds for the walnuts, egg beaters instead of egg whites, whole wheat flour, and blackberry jam for the prune puree. I also replaced a bit of flour with 10 grain breakfast cereal. My 2 & 7 year old liked these even though they were ugly (the jam made them greyish).

Mexican Casserole

I've made it as is or tweaked it and it turned out great. The best & healthiest version adds a can of drained corn, uses 1 cup of sharp cheese & subs fat free sour cream for the soup and ground turkey for the beef.

Pesto Chicken Florentine

Good as is, but you can easily change out the veggies (broccoli is good) and add lots more spinach than this calls for. My PICKY 7 year old ate this and then asked for leftovers the next night. (I make my own low-fat pesto & freeze it and used whole wheat pasta)

I used this as a guide & really like the seasonings in the tomato sauce & salsa in the beans. Add what you like after baking (cilantro, crushed chips, lettuce, etc) and season to your own tastes. (Also made a whole wheat dough to make it better for my family)

Cuban Black Beans II

Very good. Based on other reviews & what I ate a cuban restaurant, I left out the tomato paste and sugar. Even my picky 7 year old liked them. I'm not a fan of green bell peppers, but they blend well once cooked in this recipe. Different than our normal black beans & rice with cumin/cilantro from Allrecipes.

Slow Cooker Chicken Taco Soup

We didn't use the beer (just to lighten it up), and didn't do it in the slow cooker since we had some canned chicken. A great quick dinner - frying the onions first makes a big difference in the taste. (We've even added celery & carrot to get the kids eating more veggies.)

Round Steak Sauerbraten

I followed some other reviewers & cooked meat with fresh onion first. Also tossed meat in flour so that the sauce would thicken up. We all loved it, even the 3 & 5 year olds.
