Chile Relleno Casserole

Delicious! I made several changes to the recipe--I roasted 5 fresh green chiles under the broiler, peeled them and used them as the base for the casserole. I also used half aged white cheddar and half jack cheese. The result was great--my husband and I ate it in one sitting.

Island Chicken with Fruit Salsa

We were in a hurry so we just made the salsa and poured it on top of the cooked chicken breasts instead of marinating it. It was delicious! I only wish I could be eating it on a tropical island...

Bread Pudding II

Yummy! This recipe was quick and easy to make and turned out great. I had a real vanilla bean in my cupboard that a friend gave me for Christmas, so I opened it up, scraped out some of the vanilla bean bits and added them to the recipes. It was so good, my husband and I ate most of it in one sitting!

African Chicken Stew

I loved this stew. Thick, hearty, peanutty. It's like being on an African safari, except without the $3000 trip. I didn't have any garbanzo beans so I left those out and I also added jalapenos, which spiced it up nicely.

Basic British Scones

These scones are really good. I was surprised because they use less butter than the scone recipe I normally use, but they were quite good anyway. Note: I found I had to use a tiny bit more milk than the amount given.

Baked Spinach

This was really good. I had three helpings and I'm not even a big spinach fan! When cooked it has a nice brown cheesy topping with cooked spinach underrneath. One thing though--in my oven it only needed about 45 minutes, not an hour so be sure to check it early.

Aloha Chicken

The sweet and sour sauce was delicious and the chicken was really easy to make. It took a little less time to cook, at least in my oven. Try checking the chicken after about 8-10 minutes--then add the pineapple sauce mixture and continue to cook.

Caramel Pound Cake

This is one of the best cakes I've ever had. It's moist and decadent and such a nice change from chocolate or vanilla. I loved the caramel icing.
