Almond Cupcake with Salted Caramel Buttercream Frosting

I made this today for my husband to take to a potluck at his work. I doubled the recipe for the cupcakes, but used the regular recipe for the frosting and caramel. I'm glad I didn't double the caramel! There is a ton left over, and I dipped the tops of each cupcake in the caramel, and then drizzled it over frosting. I didn't have enough frosting for all of my cupcakes (maybe 6 aren't frosted) so I poked holes in them with a fork and applied a thick layer of the caramel. Everything is very tasty. I will definitely be making this again. Only adjustments I made were using Agave Nectar instead of corn syrup (I didn't have any) and I used an extra tsp of almond extract to intensify the almond flavor. Yum!

Greek Tzatziki

I just made this dip, and it was really easy. I used half a container (32oz) Greek yogurt in case it didn't turn out well, so I wouldn't have a lot of waste. Then I added 2 small Persian cucumbers (what I had on hand). I reduced the lemon juice, dill, garlic and salt since I was only making half. I also skipped the olive oil. I didn't see what the point of adding it was, because it was smooth and creamy already and I didn't want to add the extra fat. I only gave 4 stars because I made so many alterations. It was so easy to make, I'm sure I'll be making it often!

Puppy Chow

I like this recipe, and its pretty easy to make. I just wish the instructions would have mentioned that 9 cups of this cereal is really about one 12.8 oz box. That would have saved me some confusion,and some money since I bought 2 boxes. I made this exactly as directed, using chunky peanut butter as mentioned in a comment. I also added some mini M&Ms to add some color because it looked a little boring.

Scotch Shortbread Cookies

This is the second recipe I've used for Scottish Shortbread cookies, and while almost the same, this one was WAY better! The texture was great and my husband loves them! I added a little vanilla extract and lined my pan with wax paper to make it easy to get out. Super delicious and exactly what I was going for. I also let them cook 5 minutes before poking with a fork so they didn't crumble, then watched them in the oven and took them out as soon as the edges started to brown. Highly recommend this recipe for someone looking for Shortbread cookies.

Sam's Famous Carrot Cake

I made this recipe last night, following almost all the directions. I did substitute applesauce for the oil, since I prefer this option in all my baked dishes. I made two- 9inch cakes, and used half of the cream cheese frosting II recipe to frost the cakes and layer them. I let the cake set overnight so the flavors could really develope, and it was worth the wait. It was so moist and flavorful! Very tasty! Thanks for the recipe!

Good for You Greek Salad

This salad was delicious! My husband and I were getting tired of our same old salads, and this was so easy to make and will definitely be added to our dinner line up. We decided to use the advice in the reviews and we added 1tsp red wine vinegar, and then added in some marinated articokes. If you don't have to run to the store for some ingredients, like we did, this wouldn't take more than 10 minutes to make! Delicious!

Cream Cheese Frosting II

Very Yummy. I didn't have two packages of cream cheese, so I had to make a half recipe. I'm putting it on Sam's Famous Carrot Cake, and I can't wait to try them together. So far, I've been trying to keep myself from eating all the frosting before the cake is cool enough to frost!

Super-Easy Rocky Road Fudge

This is so good! I made it for the first time over the holidays, and it was so easy and delicious, I ended up making it atleast 5 more times! After the first try, I didn't even need the recipe anymore, because its so easy! Turned out great each time, and everyone loved it!

Zucchini Blossom a la Feta

I recently had these for the first time at a fancy Italian restaurant. They were delicious. I was very excited to try these, but sadly they didn't turn out the same as I expected. Everything was great, but the breadcrumbs were so heavy, it really weighed down the whole dish. Next time I think I might use a tempura batter, or just seasoned flour so it will be lighter and let the zucchini shine through. I made this as a side to serve with spaghetti and the sauce added a nice kick. I also used some goat cheese when I ran out of feta. Very tasty. Only complaint was the heaviness of my breadcrumbs!

Candy Cane Fudge

I made this near the holidays for my coworkers. It was very easy to make, except for crushing the candy canes. I skipped the food coloring, because the candycanes were pretty enough. This made some SUPER sweet fudge, and I couldn't eat more than one piece because of that. But, everyone else finished it off!

Fresh Strawberry-Oatmeal Cookies

This was a great use of extra fresh strawberries! I have a customer at work who brings me baskets of strawberries from her farm almost weekly, and wanted to make something I could bring in for my coworkers. I loved how they turned out! I read in a bunch of other reviews to add up to 1 cup extra four, so I rounded up to 2 cups total and figured I would add more at the end if needed, and I'm so glad I didn't do a whole cup extra! It was so thick I called my husband in to help me mix it after I added the berries. The lid to my cinnamon container came off, so I got a little more than 1tsp, but I liked it anyways, because you could really taste the cinnamon. They turned out amazing, and the fresh berry taste was GREAT!

Maple Banana Bread

This was a pretty good banana bread. I used 3 bananas, soy milk instead of regular (I forgot to pick it up at the store) and extra walnuts mixed in. I couldn't taste the maple syrup very well, so next time I would probably use a fancier variety instead of the regular stuff I had. Last thing, I used brown sugar with the walnuts over the top to give it a yummy crumbly top. It was good!

Peanut Butter Frosting

I already had a recipe for a Peanut Butter & Jelly cake, but I didn't care for the frosting the recipe came with. This was a perfect replacement! This was nice and fluffy, and tasted great! I am always afraid my frosting is going to be too runny, so I only added little splashes of milk (Heavy Cream was all I had, so I used that) until the consistancy was perfect. It turned out great and the cupcakes were a huge success! Thank you!

Holiday Shortbread Cookies

These were very yummy and a lot of people liked them. I read previous comments saying to use frozen butter and a grater to cut in the butter, and it worked really well. The only thing I that bugged me was the final texture. They were perfect on the bottom, but the top was very floury and too crumbly. Like I said, they taste very good so I think what I will do next time is press it down into the pan so its more solid. I also ended up adding even more butter because it was so dry.

Hot and Sour Chicken Soup

We did a few adjustments and LOVED it! We used a package of Extra Firm Tofu instead of chicken to make it more like our local Chinese restaurant. We also added Sriracha to it at the table to make it a bit spicier. We will definitely make this again!

Absolutely Best Brownies

These were really easy to make, and my Starbucks coworkers loved them! I made them quickly in the pan I melted the butter in, and I used a mix of half regular cocoa powder and half dark cocoa powder. I also added 1 packet of Starbucks Italian Via, and chocolate chunks. The via adds just a little something to all chocolate things, and none of my coworkers believed me when I told them it was a special ingredient! One coworker said "These are the best brownies I've ever had" and they were gone within 4 hours at work!

Fry Bread I

I grew up in Arizona where we had this all the time as a kid. We would get it at school and every fair or festival we went to, and we ate it with powdered sugar and honey. I've been craving this for awhile, and this was very similar to what I remembered. The instructions didn't give very much info on size, so I think mine turned out a little bigger than I would like. I'm sure it will get easier to judge size each time I make it. The recipe itself is so easy I already know I won't need the instructions next time and can make it by memory.

Watermelon Salsa

This was a very good recipe. I cut up a watermelon and had a TON left over so I was looking for something different to do with it. This recipe was very tasty, and very simple. I had everything on hand, except the onion so had to do without. Instead of hot sauce, I added a large jalapeno, minced, and some chipotle chile powder. I like my salsa spicy, and it was easy to adjust to my taste. I also added some pepper and garlic, and the salt from the chips I ate it with was perfect. It turned out great. Thank you!
