Coconut Cream Cake II
I was in the mood for coconut cake and am thrilled I found this recipe. Yum! I made the cake as directed and used two (2) 9" round pans. Be sure to grease / flour the pans well. I substituted coconut extract in the icing for the vanilla. I also used raspberry filling in the center. (Be sure to bank frosting around the outside of the lower cake, so the filling stays put.) To the reviewer who complained that her frosting was too runny, to fix this, add more powdered sugar until you achieve the consistency you want. My frosting was too thick, and I added a bit more milk to thin it down just a pinch. Overall, excellent recipe!

Easy Marinated Pork Tenderloin
While I'm not a pork fan, I found myself going back for seconds! I had 1 tbsp of Dijon mustard and used 2 tbsp of Bavarian mustard. I added 1 tbsp honey. To flavor the whole roast, I cut it twice (like I would if I was going to stuff it... Make a cut at the top third of the roast, peel the flap back and cut the remaining two thirds in half, ending up with a flat piece of meat - life a tri-fold wallet.) spread marinade on inside, roll up, bag, and add remaining marinade. I marinated for approx. 6 hours. All my picky eaters loved it, and it's easy enough to prepare in advance for an easy meal.

Blackberry and Blueberry Pie
My family loved the flavor of these two berries mixed together. While I picked fresh blackberries and blueberries this summer, I froze them to use as needed. They worked fabulously in this pie. I also used the corn starch another reviewer suggested to ensure the filling thickened properly. I've made several of these pies this fall, and my family is asking for this one for Thanksgiving dessert, too.
