Angel Chicken Pasta
I made this recipe as directed. Flavor wise- the sauce was a 5 star keeper. But.... I did have a few complaints from family and I both- 1- it looks bland- no color;2- not enough sauce;3- needs some veggies; 4- either chicken was behind done and tough or other pieces were not done at all (actually I can't really blame the recipe on this- this was probably user error) Anyway, I made it a second time, doubled the sauce and Placed everything in the crockpot. I added a package of sliced mushrooms. Cooked on low for 5 hours. I steamed broccoli (awesome with the cheese sauce)and added that and after serving it on plates, I cooked up some red pepper slices to through on top. Looked much better. :-)

Quick and Easy Green Chile Chicken Enchilada Casserole
I made the recipe as written and honestly it was very bland. Also the charring part took too long for me. So, I made it a second time and followed the advice of others and mixed a low sodium taco mix with the sour cream and then mixed it in with the shredded chicken. Then I chopped up (finely) 4 serreno peppers and mixed that (including the seeds) with the green enchilada sauce. It added a little kick but didn't make it really spicy or anything. And then I tried it with tearing the corn tortillas and skipping the charring process. Much better the second time around. Husband and father in law loved it.

Cheater Baked Ziti
For someone who works all the time- I really love easy dishes that are also good on a budget- this ziti was perfect, and it made so much! Before I baked it I devided the ziti mixture to 2 smaller casserole dishes so I could freeze one for later. Also, because I had precooked veggies from another dinner, I threw those into the dish- didn't change the flavor and my picky family ate everything!! Great recepi!
