Rice Balls a la Tim

Made these for our Valentine's dinner last night and we both LOVED them! I used ground turkey and brown rice (used the Oven Brown Rice recipe from this site to make it easy). A bit of extra garlic salt seasoning, my own homemade pasta sauce, yum! Served with asparagus and garlic bread. Hubby said it's in his top 10 dinners of all time!

Italian Love Cake

i gave it full stars even though mine didn't turn out well since it was my own rookie mistake. thought i could run cottage cheese through the food processor and substitute for ricotta like i often do with lasagna. didn't work the same in a cake recipe though! cake turned out an odd spongy consistency- it was okay, still cake afterall, but not great.

Black Bean Rice Burgers

I omitted the onions, added about a handful of oatmeal that I processed in the food processor and some bread crumbs, and added cumin, chili powder, and garlic powder. My family loved them and is begging to have them again! Next time I will add some salt to the mixture. Yum!

Slow Cooker Lasagna

I used this recipe as a guideline and then customized it for convenience and our preferences. I used 1 1/2 jars of spaghetti sauce to save time and substituted kielbasa for the meat. I also mixed in a shredded carrot and some spinach to the sauce mixture. I cooked on low for about 4 hours and it turned out great! Very easy and made great leftovers for lunches!

Mexican Style Shredded Pork

So yummy! I skipped the rice but added the cilantro and lime to the meat after I had returned it to the slow cooker. There was a LOT of liquid left in the slow cooker so I did skim some off so it didn't end up too soupy. I used the sauce from a can of 7 oz. chipotle peppers packed in adobo sauce (found in the Mexican food section of the grocery store). I used some of the remaining chipotle peppers to make the Ancho-Chipotle Salsa from this site which was fabulous also! Used the meat for build your own tacos and it was great! Leftovers are just as good too!

Ancho-Chipotle Salsa

Yum! SO good and easy! I am serving this for company tonight and will definitely be making it again! The only thing I did differently was I used diced tomatoes with green chiles instead of the whole tomatoes and I didn't seed the chipotle chile, but the spiciness is just right for our tastes!

Grilled Beef Gyros

Turned out great! I used chicken and beef, the chicken did come out a little salty, but I marinated it overnight so it would be ready to cook when I got home from work. Had I marinated it as directed it might have been fine. Either way it was still good and I'd make it again! The sauce was a little too vinegary for our taste, I would reduce the vinegar next time.

Smothered Mexican Lasagna

Yum! I have made this several times and we love it! Used ground turkey, corn tortillas, and added refried beans as a layer as others have suggested. Great as leftovers for lunches too!

Pork Empanadas

After reading another review I reduced the shortening to about 1/3 cup. I would NOT recommend reducing the shortening at all- the dough was difficult to work with and cracked easily. I thought the overall product turned out so-so, but my husband said it was one of the best meals he's ever had!

Jalapeno Chicken

Really tasty, really easy! Works well with chicken breasts. I only used a pinch of cinnamon in the rub, like other reviewers had suggested. I browned the chicken in a pan then placed it in the oven for a few minutes while preparing the sauce. I then poured the sauce in with the chicken rather than basting. Turned out great!

Garlic Linguine

I used whole wheat pasta to add a little extra fiber. I also threw in some leftover chicken. It turned out a little dry so I had to add a little extra oil. Easy to prepare and overall good taste.

Oatmeal Toffee Cookies

Sooo good! I can't stop eating them! I doubled the recipe for a picnic but still used only the 16 oz of toffee and it still turned out great. I used skor bars that I broke up into tiny pieces. Next time I won't smash them quite so small because it's really yummy to find a big piece of toffee in your cookie! Thanks so much!!

Pizza Casserole

Overall a really easy and fairly quick meal. I used canadian bacon and pepperoni. I found it to be a little bland, I think next time I'd add some garlic and maybe crushed red pepper flakes. I can see this definitely being a kid friendly meal!

Carrot Cake III

Yummy!! This cake was a huge success. I made it in two 9" round pans. Between the layers I put skor bits on top of the frosting, and also put skor bits on top of the cake. Soooo good! Everybody raved!

Laurie's Cheesy Tomato Pasta

I really didn't enjoy this recipe. My boyfriend thought it was okay, but it was way too bland for me even though I added some garlic and a little cayenne pepper. I agree with the other reviewer, it definitely reminded me of spaghetti oh's. I won't be making this one again.

Ranch Bean Dip

CRISCO® Chicken Enchiladas
