Fresh Southern Peach Cobbler

Made this for dessert last night and it was soo good! I do love a "traditional" cobbler with a pie type crust on the bottom and top, but I think I might like this version even better! I only used five large peaches because that's all I had on hand, but I thought it turned out just fine! I loved the crunchy cinnamon sugar topping and the cake-like crust. I made the recipe just like the directions suggested (minus the number of peaches) and I personally liked the consistency, not to runny or too thick! I also thought this was a pretty easy dish to put together. Will be making this the rest of peach season!

Balsamic-Glazed Salmon Fillets

I love this simple recipe! It is a quick and easy meal for me to make when I don't have much time. I didn't put oregano in my dish, but I am not big on the flavor so I left it out. My husband (who isn't a big fan of fish) enjoys this recipe. It adds a lot of flavor! For me, this is my go to salmon recipe!

Little Meat Loaves

I was on the hunt for a quick, easy, and somewhat healthy meat loaf recipe and I stumbled across this one. It's just my husband and I - so I actually cut the recipe in half by simply eliminating the sausage so we wouldn't be eating the same thing every night for a week! I also wanted to make it a little healthier so I thought that would help some. I also used the leanest ground beef I could find. I think if I used a meat with a little more fat in it, it would have been even better! I will say I might add some vinegar to the sauce next time. It is a little too sweet for my taste so I would like to add something to cut it a bit to make it a little tangier. When you mix it up, just give it a taste and tweak it if need be. I did use dark brown sugar - since that all I had on hand - so that might have made it taste a little sweater. Cutting the recipe in half made four little loafs - perfect portions for us! Overall, it was an decent dish - one that I would make again!
