Zucchini Casserole

I made this for our Sunday night dinner without changing any ingredients (except I went by other reviews & only used 3 zucchini).. it is delicious! I didn't boil the zucchini before baking because we don't like mushy food. Next time I'm going to add some garlic & a bit of Frank's Red Hot to kick up the flavor a bit. It's a great side for someone on a low carb diet.Hubby loved it!!

Tomatillo Salsa Verde

I have to admit that I used this recipe as a stepping stone.. I'm sure it is delicious as written but I couldn't buy fresh oregano and I wanted fire roasted tomatillos so I ran with it. After roasting the tomatillos I used an immersion blender to puree them, put them into a large sauce pan & set aside. I then placed an entire bunch of cilantro, half of a sweet onion, a seeded jalapeño, 1/2 teaspoon garlic pepper, 1 heaping teaspoon of minced garlic and a 1/4 cup of water into the immersion blender cup & whirred until smooth then added it to the saucepan. To the saucepan I added a heaping tablespoon of chicken base, 1 heaping teaspoon of dried oregano and a tablespoon of cumin. Brought the mixture to a boil, reduced to a simmer for 5 minutes & Yummmmmmm!

Chocolate Cavity Maker Cake

I've been baking a version of this cake since the 90's.. it's always a huge hit. I too mix up the flavorings but prefer using Kahlua. I don't use either chips mini chips ~ try using a good quality chocolate (milk, dark white depending on the flavor you're baking) that you cut/chip yourself ~ to die for!

Pennsylvania Greek Sauce

Loved this sauce.. reminds me of home Erie/Corry PA! The only thing I made sure to do (that wasn't mentioned in the recipe) was to mash the browned beef with a potato masher. All of the Greek sauces that I have eaten have an almost smooth consistency. PS~WhitMcMo, we didn't name the recipe or the sauce ~it's called Greek Sauce all over Northwestern PA and here in Western NY too ~ "If it ain't broke, don't fix it!"

Pork Chop and Cabbage Casserole

My husband really enjoyed this dish. I did change it up a little... I used a large head of cabbage, only 3 potatoes and added a bit of garlic. I baked the uncovered cabbage and potatoes at 400 for 30 minutes before adding the pork chops. I then covered the casserole, lowered the temp to 350 and baked for an hour. Delicious!!

Homestyle Turkey, the Michigander Way

THIS TURKEY ROCKS!!! Normally I do not like turkey, it's bland and dry but.. even I enjoy it prepared this way. The only thing I changed was to lay several stalks of celery, a medium onion cut in very large dice and a handful of baby carrots on the bottom of the roasting bag* and into the cavity before I baked it.. the gravy made from the drippings was awesome! Thank you :) * I always use roasting bags to save time on clean up.

Cranberry Stuffed Turkey Breasts

I made these years ago, when the recipe was first posted.. they were very good and my family enjoyed them BUT I'm not a turkey fan so I now use the stuffing recipe when I make stuffed pork chops ~A+**** LOVE it! They are so moist and flavorful. Thanks for the recipe.

Crustless Cranberry Pie

I made this pie for dessert today but.. it smelled soo delicious that I just had to sneak a slice! Yum! Since I have a dairy allergy I used dairy free margarine plus I exchanged almonds for the walnuts as others had done (I kept some out of the batter to scatter across the top) and subbed Amaretto Disaronno for the almond extract. I then decided a glaze would send it over the top so I mixed 1/2 cup 10x sugar with enough Amaretto to to make it "drizzleable". Thanks for the recipe ... it is now in my "go to" recipe box!!!

Chicken Katsu

Yummm! Thank you for sharing this recipe. I thoroughly enjoyed this dish ~ every bit as much as I enjoyed it at the Big Island Grill in Kona, Hawaii last summer. Now I need to whip up a batch of beef teriyaki, then locate some Hawaiian sweet potatoes for the sweet potato haupia cheesecake and I'll be in heaven. Thanks again

Chicken and Spinach Alfredo Lasagna

I loved this recipe, the minute I saw it I knew that I would have to whip up a version that I could eat! I am severely allergic to cows milk so I made a soy based white sauce made to replace the soup & cream sauce. Veggie Shreds Italian blend cheese replaced the mozzarella and I used goat cheese instead of ricotta. Instead of the mushrooms I used artichoke tapanade and taking advice from sorashell I added sundried tomaotes ~ soooo good!! Thank you for sharing your original recipe.. it was inspirational :)

Dark Chocolate Bacon Cupcakes

Feeling adventurous? This recipe is to die for... chocolate cake made even better with the addition of bacon & coffee! I used the pre-cooked crumbled bacon bits in a bag by Hormel and baked it in a 9x13 pan and frosted it with chocolate ganache ~ it is OMG good!!!

Penny's Whiskey Cake

Thank you Penny for posting your recipe, Ive been making versions of this cake for years. One of my favorites is to use a white or yellow cake mix and Chambord ~ I also stir a handful of fresh or frozen raspberries into the cake batter. I've made this cake using a pineapple cake mix, well drained pineapple tidbits and pineapple rum. I've also made it using a devils food or a fudge chocolate cake mix, a handful of chocolate chips and then use Kahlua as the liquor... they're all over the top delicious!!! Hmmm, I was just wondering what a lemon cake with lemoncello would taste like or an orange cake with Grand Marnier?? The possibilities are endless!! Thanks again :)

Diner-Style Baked Potato Home Fries

This is almost identical to my mothers recipe, the only real difference is that she adds a little onion powder. Mom boils the potatoes "with their jackets on" the day before and then uses a large dice instead of slices... Super delicious!! Thanks for the recipe :)

Irish Potato Casserole

Very disappointing recipe... far too greasy and tasteless. I will not be making this again. What makes this dish "Irish" Potatoes? I'm half Irish and have traveled all through Ireland and have never eaten potatoes prepared this way. For a true Irish potato dish try the recipes for Colcannon or Champ.

Spanish Rice Original

Mmmm, Delicious.. reminds me of the dinners we've eaten in the little shops outside of Mazatlan!!! Such an easy recipe too. The only changes I made ~ used Mexican Style Chili Powder(hot) , added some Cumin & a diced Jalapeno Pepper. Thank you!!
