This was delicious, though after reading other reviews, I made some modifications. I used 6 small red potatoes instead of the regular potato. I also doubled the carrots and celery and added 2 red bell peppers, 2 spicy fresh peppers, 2 Tbsp. fresh ginger root, 2 Tbsp. fresh garlic, 2 Tbsp. mango chutney, 1 tsp. nutmeg. I used a hand mixer in the pot to save a couple of steps and a mess, and it worked great. I added 2 Tbsp. low fat cream cheese to add some creaminess, and stirred it in to melt it. I froze half of what I made, and shared the rest with happy friends. I will definitely make this again!
