Charleston Breakfast Casserole

Tomato Spinach and Basil Soup

Wonderful soup! Definitely saute the onions until soft and puree the soup before adding the chopped spinach. Also note that the fresh spinach takes longer than stated to properly wilt. Our entire family (even the finicky 11 year old) loved it!

Banana Smoothie I

Excellent dairy-free version: 1 cup almond milk, 2 ice cubes, 1 ripe banana, 1 egg, 2 teaspoons sugar (I used turbinado, but white is fine) and (optional: 2 squirts flax oil (1 tsp)), - a sprinkle of cinnamon or nutmeg adds a nice touch, but isn't necessary.

Hot Chicken Salad

This casserole needed a little more *zing*, so I added 1 more TBS. lemon juice. I also dusted the top with more sliced almonds. It made it more appetizing than crushed chips.

Cranberry Pork Roast

Substituting 1/2 cup Orange Juice for the Cranberry Juice and cutting the clove and sugar (I used brown sugar) measurements in half gave this recipe the added zip & zing it was missing. I also used cranberry sauce (with whole berries) instead of the jellied cranberry sauce. It was supurb!

Brownie Torte

This torte was outstanding and very easy to prepare!!! Fresh berries must be placed on top while the icing is still "wet" or they fall off. I used fresh, dry raspberries, but any berry would work. Loved it!

Spinach-Stuffed Salmon Fillets

As for slits: I cut a "V" into the top of the filet, scooped out the excess salmon, and filled with the spinach/pesto mixture. For added flavor, I sprinkled gorgonzola cheese on the top of the filets about 5 mins. before they were done. Fabulous dish & wonderful presentation! I'll make again and again. (p.s. The leftover salmon (cut from the filets, could be cooked and used the next day to make Red Pepper & Salmon Pasta - another 5* keeper!)

Spicy Sausage Soup with Cilantro

Fabulous, hearty fare! I made a few changes: No hominy, extra can of Northern beans, 1/4 cup chopped cilantro, and a combo of hot and mild italian (turkey) sausage (total weight 1.5 lbs). (I also needed to add more water while it was simmering to make the soup more brothy.) With some warm bread from the oven, this soup makes a wonderful winter meal.

Hot Cocoa Mix in a Jar

Don't look up any more Hot Cocoa recipes ... this is THE one. Excellent gift! I tied raffia around my jar & secured a few mini candy canes (pre-shrink-wrapped) in the wrapping for my recipients to use as stir-sticks. How festive!!

South Beach Chopped Salad with Tuna

Squash Casserole I

Steaming the squash helps with the moisture issue and retains the vitamin content in the squash. Mash them or not, the choice is yours. I sauteed the onion for added flavor; removed them to a bowl, added more butter to pan and browned the bread/cracker crumbs. This is an easy recipe to play with, should you choose. The base recipe is very yummy!

P.J.'s Fresh Corn Salad

This recipe is a keeper. I used two cans of Freshlike brand *extra crisp* corn and combined with other ingredients as stated in recipe. This combination yielded more veggies and less corn with just the right amount of crunch! Great for a summer picnic, or for a potluck alternative to slaw and potato dishes.
