Cranberry Pork Roast

Substituting 1/2 cup Orange Juice for the Cranberry Juice and cutting the clove and sugar (I used brown sugar) measurements in half gave this recipe the added zip & zing it was missing. I also used cranberry sauce (with whole berries) instead of the jellied cranberry sauce. It was supurb!

Butter Crescents

Fabulous! For those that want more of a buttery taste: spread softened butter on dough round before cutting into wedges. My 9 year old son loved helping make these. We made 24 medium sized rolls from this recipe.

Hot Cocoa Mix in a Jar

Don't look up any more Hot Cocoa recipes ... this is THE one. Excellent gift! I tied raffia around my jar & secured a few mini candy canes (pre-shrink-wrapped) in the wrapping for my recipients to use as stir-sticks. How festive!!

Gingerbread Men

Loved these cookies! Even my kids (9 & 13) who hate traditional Gingerbread cookies, loved this variation. We used mini-m&m's for buttons and they turned out so cute. Perfect texture, too; a little crispy on the outside and chewy on the inside. YUM!!

Caramel Snack Mix

Oh...my...Gosh! This is by far the best variation of Chex mix our family has ever tasted. The toffee-like coating is perfect. You can use any selection of nuts (we liked a combination of rice chex, corn chex, peanuts, pecans & sliced almonds and pretzed sticks). I made my first batch to give away to co-workers, but half the gallon bag was gone the next morning by my much-addicted, snack-munching family. Thank you, Trish!

Italian Wedding Cookies III

Growing up we called these 'snowball' cookies, and this is a very good recipe. I like crushed pecans, instead of almonds - but any nut would do. The salt is excessive, unless you're using unsalted butter. I cut it for my second batch to 1/2 teaspoon.

Brownie Biscotti

So easy to make, and even more delicious to eat. My daughter-in-law and I have added this wonderful recipe to our Christmas baking tradition. Once the biscotti were dry & cooled, we dipped their tops in white almond bark, drizzled melted chocolate chips over the white, and sprinkled finely crushed walnuts over the melted dark chocolate. Paired with the fabulous recipe for "Hot Cocoa Mix in a Jar" by Traci (TJ), this duo will satisfy any chocoholic on your Christmas list!

Banana Smoothie I

Excellent dairy-free version: 1 cup almond milk, 2 ice cubes, 1 ripe banana, 1 egg, 2 teaspoons sugar (I used turbinado, but white is fine) and (optional: 2 squirts flax oil (1 tsp)), - a sprinkle of cinnamon or nutmeg adds a nice touch, but isn't necessary.

Spicy Sausage Soup with Cilantro

Fabulous, hearty fare! I made a few changes: No hominy, extra can of Northern beans, 1/4 cup chopped cilantro, and a combo of hot and mild italian (turkey) sausage (total weight 1.5 lbs). (I also needed to add more water while it was simmering to make the soup more brothy.) With some warm bread from the oven, this soup makes a wonderful winter meal.

Chicken Tortilla Soup I

Yum! This was so easy and so good. I skipped the hominy and added a can of Rotel (original) to give it a kick. Our favorite toppings are crushed blue tortilla chips and chopped avocados.
