Mango Tango Black Bean Salsa

For more of a soupy salsa, add about a 1/2 cup of your favorite salsa to the mixture. This is a great combo!

Best Wild Rice Soup Ever

Wow~ is right! This soup is very yummy. I added 1 cup of diced ham & 1 cup of diced chicken. I also used 2% milk (lower fat) and it still was rich and creamy. Sherry is optional. Would definitely make again!

Cafeteria Carrot Souffle

My family, who all strongly dislike cooked carrots, took to this souffle like fish to water. I cut the sugar in half (using part brown & part white), and sprinkled the top with pumpkin pie spice. What a treat!

Spinach-Stuffed Salmon Fillets

As for slits: I cut a "V" into the top of the filet, scooped out the excess salmon, and filled with the spinach/pesto mixture. For added flavor, I sprinkled gorgonzola cheese on the top of the filets about 5 mins. before they were done. Fabulous dish & wonderful presentation! I'll make again and again. (p.s. The leftover salmon (cut from the filets, could be cooked and used the next day to make Red Pepper & Salmon Pasta - another 5* keeper!)

Awesome recipe! Much like dishes I've had at Carrabba's or J.Alexander's. I, like others, added some 1/2 & 1/2 to the sauce (maybe 1/3 cup). Wonderful!

Hot Chicken Salad

This casserole needed a little more *zing*, so I added 1 more TBS. lemon juice. I also dusted the top with more sliced almonds. It made it more appetizing than crushed chips.

Chicken Tortilla Soup I

Yum! This was so easy and so good. I skipped the hominy and added a can of Rotel (original) to give it a kick. Our favorite toppings are crushed blue tortilla chips and chopped avocados.

Spicy Sausage Soup with Cilantro

Fabulous, hearty fare! I made a few changes: No hominy, extra can of Northern beans, 1/4 cup chopped cilantro, and a combo of hot and mild italian (turkey) sausage (total weight 1.5 lbs). (I also needed to add more water while it was simmering to make the soup more brothy.) With some warm bread from the oven, this soup makes a wonderful winter meal.

Banana Smoothie I

Excellent dairy-free version: 1 cup almond milk, 2 ice cubes, 1 ripe banana, 1 egg, 2 teaspoons sugar (I used turbinado, but white is fine) and (optional: 2 squirts flax oil (1 tsp)), - a sprinkle of cinnamon or nutmeg adds a nice touch, but isn't necessary.
