Wheat Germ Whole-Wheat Buttermilk Pancakes

Fabulous pancake recipe! To make it non-dairy, I substituted almond milk (+ 2 tbsp. lemon juice) for the buttermilk and added blueberries to the batter. It's a keeper!

Squash Casserole I

Steaming the squash helps with the moisture issue and retains the vitamin content in the squash. Mash them or not, the choice is yours. I sauteed the onion for added flavor; removed them to a bowl, added more butter to pan and browned the bread/cracker crumbs. This is an easy recipe to play with, should you choose. The base recipe is very yummy!

Lentil Soup

This is an easy soup recipe to play with (as other reviewers have had success doing). Our family likes it when I add a pound of chunked-up spicy turkey sausage (Italian-style, casings removed). It adds just the right amount of spice and nice meaty texture.

Tomato Spinach and Basil Soup

Wonderful soup! Definitely saute the onions until soft and puree the soup before adding the chopped spinach. Also note that the fresh spinach takes longer than stated to properly wilt. Our entire family (even the finicky 11 year old) loved it!

Party-Size Greek Couscous Salad

I used quinoa instead of couscous (a similar, yet more healthful substitution). The recipe seems to be lacking something in terms of seasoning. I added salt, pepper and Greek seasoning, but it still didn't have the Greek flavor I was hoping for. Maybe I'll try again with a different brand of Greek dressing and more calamata olives.

P.J.'s Fresh Corn Salad

This recipe is a keeper. I used two cans of Freshlike brand *extra crisp* corn and combined with other ingredients as stated in recipe. This combination yielded more veggies and less corn with just the right amount of crunch! Great for a summer picnic, or for a potluck alternative to slaw and potato dishes.

Cumin and Coriander Chickpea Salad

Recipe was great, but even better when mixed with PJ's Fresh Corn Salad. The crunch of the corn and peppers along with the garbanzo beans was a very nice blending of flavors and textures.

Weekend Brunch Casserole

Modified a bit to suit our tastes: used chicken/apple sausage (cut into bite-sized chunks), 1/3 cup crumbled goat cheese, and 1/2 cup cooked/squeezed spinach as the filling. Everyone wanted more!

Vegetable Biryani

Similar to popular rice salad served at Wild Oats. I, too, added fresh broccoli and beans. Used coconut, raisins, cashews and cilantro as garnish. The sweet is nice with the spicy.

Curried Turkey and Rice Salad

This salad was delicious. I did make a few changes: used wild rice instead of white, add 1 tsp. curry powder and minced ginger to vinegar sauce for the salad. At the time I made it, I only had red onions, so I minced 1/2 of one instead of using green onions, but I think either would be fine. For the meat, I had roasted a whole turkey breast the night before & used 1/2 of it for the salad. Very, very tasty - indeed!

Brownie Torte

This torte was outstanding and very easy to prepare!!! Fresh berries must be placed on top while the icing is still "wet" or they fall off. I used fresh, dry raspberries, but any berry would work. Loved it!
