Best Ever Muffins

I made these this afternoon, and thought that they were a great muffin. I made half with blueberries and the other half with chocolate chips. Both were fantastic. I used 1 cup of all-purpose flour and 1 cup Ultragrain flour. I also used 2 TBSP oil and 2 TBSP reduced fat sour cream. Took the advice of others and set the oven temp to 425 and reduced to 400 when putting the mufffins in the oven. Sprinkled the tops with raw cane sugar, and they looked beautiful. Great basic recipe, will use again and again. Next time I am going to make mini muffins for the kids snacks.

Best Spanish Rice

Delicious Raspberry Oatmeal Cookie Bars

I made these last night for the first time and they are delicious! I followed the directions, only adding some lemon zest to the preserves. I also used my food processor to combine the ingredients. Pulsed about 12 times and it was done. Baked for just over 30 minutes. I have always loved these bars, don't know why I waited so long to make them. Super easy and taste great!

Fluffy Peanut Butter Frosting

This was phenomenal tasting. Of course I love anything peanut butter. I only had crunchy peanut butter, which adds some crunch, but if I were going to frost a cake with this, I would use creamy. Next time, I am going to be more careful about gradually adding the powdered sugar. I was in a hurry to frost the chocolate muffins, and perhaps should have mixed it a bit longer too. But it was delicious!

Sugar Coated Pecans

I have made these a few times now, and they are so easy and so good. I plan to give them as part of Christmas treat bags. I follow the recipe exactly, but maybe next time I will try the white sugar/ brown sugar mix just for variety. You can't go wrong with this one!

Pizza Dough I

This dough turned out really good. I used 1/2 cup of whole wheat flour in place of some of the all purpose. I also threw it all in my mixer, and kneaded it with the dough hook for a couple of minutes. This is our new family favorite. It tasted great, was done in no time, and rolled out really easily. I pre-baked the dough for about 6 minutes, which results in a crispier crust. Really good, give it a try!

Oatmeal Chocolate Chip Muffins

These just came out of the oven, and they are fantastic! I always read through the reviews, sorted by most helpful, and here are the changes that did. I used half regular and half whole wheat flour, egg beaters instead of egg, used only 2 Tbsp oil, and used applesauce to make 1/2 cup, used miniature chocolate chips, added a splash of vanilla,and just used 2 TBSP pecans in the muffins, and 2 TBSP for the topping, that's just personal preference. I try to substitute applesauce for oil in some baked goods, and this is by far the best results!

Classic Bran Muffins

These just came out of the oven, and they are fantastic! I used 1 cup of plain lowfat yogurt in place of the buttermilk. I also used 2 TBSP oil, and 4 TBSP applesauce in place of the 1/3 cup oil. They are moist and full of flavor. Will be making these again soon.

Hearty Breakfast Cookies

I have made these cookies a few times now, and feel the need to write a fantastic review. I did make modifications based on other reviews to suit our own tastes. I used white whole wheat flour in place of the whole wheat and part of the white. I also used rolled oats, applesauce for half of the butter, egg whites, and chocolate chips, and omitted the cinnamon. I used a combination of regular peanut butter and natural crunchy. These were fantastic. I understand that reviewing a recipe based on our own changes is a little off, BUT the original is so good, it can handle lots of changes. I am not planning on serving these for breakfast, instead as a replacement for some very pricey all natural kids granola bars.

Striped Delight

I received this recipe from a friend a while back, and have made it a few times. It is always a hit. I use 1/3 less fat cream cheese, light cool whip, and the sugar-free/fat-free pudding mix with skim milk. It is delicious. I also top with some more crushed oreos.

Roast Sticky Chicken-Rotisserie Style

I made this today and it was fantastic! I followed the recipe for the most part, omitting the white pepper and thyme because I didn't have any in the house. I did use just one chicken, so I halved the rub recipe, and the cooking time was only about 3 hours, due to the size of the chicken. My family is quite picky, but it was a hit!

Monster Cookies VI

These cookies were excellent. I made them as directed by the recipe and they turned out great. I used my cookie scoop and used 2 scoops per one cookie, and the size was perfect. Tastes great from the oven, but also great from the freezer, actually I think I like them that way the best.

Unbelievable Spinach Calzones

I just made these tonight, and the family loved them. A few changes I made were using homemade pizza dough, adding some garlic salt, oregano, and cut-up pepperoni. I also put some shallow slits on the top, and brushed the tops with olive oil and sprinkled with a little sea salt. Will be making again soon!

Oatmeal Peanut Butter Cookies

I just finished making these and had to give it an excellent review. They were delicious. I did make a few changes based on other reviews. I used all butter, 1 1/4 c. crunchy peanut butter, 1 tsp. vanilla, and just under 2 cups of oatmeal. Also, I added some chocolate chips to about half of the dough. With or without those, they tasted great.

Sweet Party Mix

I just made this and can hardly keep my hands off from this. It's delicious. I used a corn chex/rice chex mix b/c I didn't have crispix, but followed everything else exactly. I am letting it cool on parchment paper, and it is coming up quite easily. This is a keeper.

Banana Bran Muffins

These muffins were great. I followed some suggestions, and substituted 1/4 c. of the butter for applesauce. Also used 1/4 c. brown sugar and 1/4 c. splenda. They were gone in about 30 minutes! I will be making these again!

Honey Wheat Bread I

I made this bread yesterday, following the recipe exactly. It turned out wonderful. I did use my stand mixer to knead the bread, mixing for 8 minutes. I will be making this again soon.

Banana Muffins II
