Low-Fat Blueberry Bran Muffins

Very good, nutritious muffin recipe. The muffins didn't rise well and were very moist but I expected that based on the ingredients. Used 1/3 cup brown sugar splenda instead of brown sugar, unsweetened strawberry/kiwi applesauce instead of regular and buckwheat flour instead of whole wheat flour. Also added 1 tbsp flax seed to the bran mix. The muffin was a little sweet for my taste but it could have been from the bran cereal I used. I let the bran soak in the milk until it was mushy (~ 15min). Will make again based on the nutritious value alone. I may try adding protein powder to the mix next time.

Cajun Seafood Pasta

Fantastic recipe! I changed the recipe slightly. I sauteed 2 cups sliced mushrooms in butter until brown and them added 1/4 cup white white. After the wine evaporated off, I added 5% light cream. Did not use the chili peppers or the white pepper. Served it over green / white linguine.

Morning Glory Muffins I

Excellent recipe! I made some small changes - reduced the all purpose flour to 1/2 cup, added 1/2 cup 7 grain flour and a total of 1 cup soft whole wheat flour. Added chopped dates to the mix and like other users, used unsweetened applesauce instead of apple butter. I didn't have any muffin tins so I made it into a large loaf. Very moist and delicious!

Creamy Rice Pudding

I used basmati rice and substituted an equal portion of maple syrup for white sugar. Instead of milk, I used 1 can of Skim Evaporated Milk + 1/2 cup skim milk. Very creamy and quite tasty!

Beef Barley Stew

Very good stew. The balsamic vinegar adds an interesting flavour. I only needed 1/2 the amount of flour/water mixture to thicken it up.

Chewiest Brownies

The best brownies - fast and easy to make! I scaled the recipe down to fit an 8x8" pan - 1 cup sugar, 1/3 cup melted butter, 2 eggs, 1.5 tsp vanilla, 3/4 cup flour, 3/4 cup cocoa, 1/8 tsp salt, 1 tbsp light cream, 1/4 cup chocolate chips. You can't go wrong with this recipe.

Whole Grain Waffles

Great recipe! I replaced the 1/4 cup all purpose flour with 1/4 ground oats. I didn't have any whole wheat pastry flour on hand so I used 1/2 cup whole wheat flour and 1/2 cup pastry flour. I also used 1/4 cup melted butter instead of the canola oil. Simple to make!

Blueberry Coffee Cake I

This cake was easy to make but it was a little bland in taste. I modified the topping by substituting 1/2 the topping flour for quick cooking oats. I also sprinkled half the topping on the cake batter before adding the blueberries.

Health Nut Blueberry Muffins

I made these muffins today after a long hiatus. To support clean eating, I replaced the white sugar with 1/4 cup Sucanat (mixed in dry) + 1/4 cup honey (mixed in wet) + 1/4 cup chopped dates. They were great!
