Fluffy Whole Wheat Biscuits

Sour Cream Coffee Cake III

Great cake! Used 1.5 cups white sugar. Added 1/2 cup soaked raisins and 1/4 cup broken pecans to middle layer with streusel topping. Turned out great.

Turkey and Quinoa Meatloaf

Great meatloaf recipe - better than beef. Reduced hot pepper sauce in 1/2. After 35 minutes of baking, drained the liquid and flipped the loaf onto a foil lined baking sheet. Added a glaze of ketchup, worcestershire sauce and brown sugar - resumed baking for 10 more minutes.

Oatmeal Pancakes II

Great recipe! Doubled the recipe and made some substitutions for clean easing: whole wheat flour, honey for sugar, applesauce for oil, plain yogurt for buttermilk. Reduced baking soda (as per other suggestions). Added one mashed banana.

Grilled Beef Steaks with Espresso-Bourbon Sauce

Yummy though I did not use espresso. Reduced 1/2 cup dark coffee (~half), then added 1/4 cup light soya sauce, 1/4 cup pure maple syrup, 1/4 cup brandy. Reduced liquids again in half and added a sprig of rosemary at end for additional flavour and let sit for 10 minutes. Great on grilled beef tenderloin

Oatmeal Raisin Cookies I

Hard to review on original recipe because I made some changes...1 cup brown sugar & 1/2 cup white sugar. 1/2 tsp cinnamon & 1/2 tsp nutmeg. 2 cups large flake oats & 1/2 cup quick oats. Soaked raisins in 1/4 cup brandy for 20 minutes (discarded extra brandy after soaking). Not dry at all. Great flavour with additional spices and brandy.

Very good muffins - made 29 minis (baked for 11 min). 1 cup WW flour & 1/2 cup all purpose. 1/4 cup brown & 1/4 cup white sugar. Replaced oil with unsweetened applesauce. Added 1/4 cup flax seed, 1/4 cup chopped walnuts and 1/2 tsp cinnamon.

Fudge Truffle Cheesecake

Fantastic cheesecake - great for Valentines Day! Cut the recipe in 1/2 (2 people) and used smaller springform pan (45 min bake). Changed the base - ground Oreo cookies with a handful of pecans and a couple tbsp of melted butter. Used Ghiradhelli Semi-Sweet chips, "light" cream cheese, low fat sweetened condensed milk. Served with whip cream and raspberries. To die for recipe - it replaced Chantal's NY Cheesecake as our favourite.

Tangy Slow Cooker Pork Roast

Very good recipe. Cooked 2 lb roast for 6 hrs. Added fingerling potatoes, baby carrots and 1/2 can pineapple chunks 2 hours into cooking. Thickened sauce with cornstarch to make a gravy.

Best of the Best Blueberry Muffins

I used salted butter (1/3 cup), 3/4 cup sugar, 1/3 cup buttermilk and 1/3 cup low fat vanilla yogurt (also omitted the sugar top). Muffins rose nicely and are not sweet. Would add some lemon zest next time for extra flavour.
