Slow Cooker Pulled Pork

Used trimmed tenderloin and a can of Guinness. Added a couple of bay leaves, garlic powder, salt, pepper to the slow cooker. Shredded great and was not dry. Quality BBQ sauce is key. Served over coleslaw on kaisers. Enjoyed by everyone.

Manicotti Alla Romana

Great recipe and easy to make. Used half ground beef and half Italian sausage. When cooked, used the processor to "purée" the meat, spinach, ricotta and egg together. Loved the tip about using a freezer bag for piping the filling. Oven ready cannelloni noodles eased the preparation. For the white sauce, used milk instead of cream and no bouillon. I like to add nutmeg to white sauce for a unique flavor. Will make this again!

Love Mussels

Great recipe. Added 1/4 cup white wine to sautéed onions and garlic. Used 2 lbs of mussels - plenty of sauce! Served as main course for 2 people with garlic bread.

Yogurt Biscuits

Yummy! Used Half ww pastry flour, used butter instead of margarine, added garlic powder, cheddar cheese. Baked on parchment paper for 18 min at 400F.

Cinnamon Hazelnut Biscotti

Toasted the hazelnuts and then peeled the skins. Baked for longer than recipe stated to get a crunchy cookie. Next time would increase the amount of cinnamon for a bigger flavour profile.

Cranberry Bars

Cut back on sugar as per other suggestions. Found this recipe to be a little too much "cake-like". Thought that it would have more of an oat texture (similar to date squares). Flavour of cranberry sauce was good.

Rhubarb Pork Chop Bake

Strawberry Rhubarb Coffee Cake

This cake didn't quite work for me. The topping was thin and the cake was overbaked as a result while trying to reduce the liquid in the cake. Note: Both strawberries and rhubarb were fresh.

I turned this recipe into bars. I doubled the batter and spread into parchment lined jelly roll pan. Pressed lots of almond slices into batter so that everything was covered. Omitted the egg wash.

Ninety Minute Cinnamon Rolls

Very simple & delicious recipe! I used Sucanat instead of brown sugar and added chopped walnuts. It took ~ 45 minutes of proofing in a warm location for the rolls to double in size. The 9x13" pan worked very well.

Oatmeal and Wheat Flour Blueberry Pancakes

Great recipe - my 10 yr old who doesn't like "oats" changed her mind after eating these pancakes. I didn't have soy milk on hand so I followed others suggestions regarding buttermilk. Made the recipe again today with more variations. Cut back baking powder to 1 tbsp. Used all whole wheat flour, 3/4 cup plain yogurt and 1 1/4 cup skim milk. Replaced sugar with honey.

Bread Pudding II

Yummy! I cut the recipe in half for 2 people and still had leftovers. Used up some large pieces of light rye bread. Replaced the chocolate chipits with 1/4 cup butterscotch chipits (the baking smell was awesome). Also replaced the sugar with a reduced amount of honey. Used two ripe bananas. I found that it took a while for the egg mixture to set (I used the water bath - no tea towel) so I took my souffle pan out of the bath after an hour and baked it directly on the oven rack for ~ 15 minutes more.

Cottage Cheese Pancakes

This combination of ingredients gives a final texture similar to a quiche. Used 1 cup 1% cottage cheese, whole wheat flour, applesauce instead of oil, 4 eggs, 1/2 tsp baking powder, 1.5 tbsp honey. Blended everything in a blender to make a smooth batter. Transferred to a sprayed frying pan and topped with handful of blueberries. Baked in oven for 15 minutes at 375F. Turned out great!
