Sopapilla Cheesecake Pie
Made this for my husband who likes to take a sweet in his lunch box every day, Didn't know where to find Mexican vanilla so I used plain vanilla extract. He ate the ENTIRE dish pretty much himself! I had a couple tiny pieces as I'm very careful about what I eat. It was hard though because this is SO yummy!! When it got down to a couple pieces left, he suggested that it may be time to make another one. :)

Slow Cooker Cilantro Lime Chicken
This can be used for so many things. I made enchilladas and had enough left over for soup. For the soup I added the block of cream cheese and the chicken broth as recommended BUT I also added spanish rice and a can of refried beans. Made a thicker consistancy. Topped the soup off with a handful of Santa Fe style tortilla strips (Fresh Gourmet brand). AWESOME!!!

Yummy Eggnog Pie
I had leftover eggnog from Christmas and didn't want to waste it. Found this recipe and it's great! My husband loves it! I'm a BIG fan of Nutella so I warmed some in the microwave for 30 seconds, put it in a baggie, snipped off a corner and drizzled it all over the pie. It was a great addition.
