Homesteader Cornbread

This was very bland and flavorless. The texture was spongy. I was just looking for a classic recipe and was disappointed.

Coconut (Haupia) and Chocolate Pie

So far I've only tried making the puddings and they are delicious. I thought the flavors were perfectly sweet, if not overly sweet and had a lot of coconut flavor. I can still remember the taste of Ted's pie that I had a few weeks ago on my last trip to Oahu and this is a good interpretation but not as perfectly balanced in sweetness and richness as Ted's. I will definitely make the whole pie soon though.

Sicilian Spaghetti

Delicious. I love the salty anchovies, so I would use less noodles (or double the "sauce") so that the spaghetti had more of a coating. I used panko and liked the crunch it added to the texture. Delicious and easy.

Cranberry-Pumpkin Cookies

The recipe didn't really taste like pumpkin but it was still tasty. It needed a little more sugar and the texture from the walnuts really added to the soft, cake-like texture. Next time I would probably find another pumpkin cookie recipe.

Roasted Vegetable Lasagna

This dish was delicious and easy to make. I used about half the ricotta mixture and threw the mushrooms in the sauce instead of roasting them. The roasted veggies added such flavor to the jarred pasta sauces. The carnivores loved this as well.

Avocado Shrimp Ceviche-Estillo Sarita

Great recipe. Definitely leave it in overnight and stir the shrimp around as the lime juice does not cover it all. I was getting discouraged since some of the shrimp didn't seem to be cooking. Give it enough time to turn pink so that guests aren't scared to eat it.

Spinach and Potato Frittata

This recipe was great and easy. I still need to practice because the top was still runny as the bottom was becoming very golden. In order not to burn the bottom, I quickly flipped the frittata to cook the top.

Microwave Truffles

This was a great recipe for my first time trying truffles. I actually used a double boiler instead of the microwave, but used the same proportions. It definitely needed time to set in the cups...after 1.5 hours in the fridge, the consistency was still fudge-like. Next time I would probably refrigerate the whole batter then scoop out truffle balls instead of using the cups. I substituted hazelnuts and a lot of Frangelico. They were a hit.

Japanese Chicken Wings

I integrated the 2 most helpful recipes and they turned out great and were very easy to make. So first, I seasoned, floured, and sprayed w/ PAM...baked at 400 for 30 min. Then poured on the sauce (I added chili flakes and some sweet chili sauce) and basted for another 30 minutes. I'll definitely make them again.

Big Soft Ginger Cookies

They weren't too sticky, so I didn't have to let them sit before rolling. I doubled the recipe and used a cookie dough scooper and was able to make about 6 1/2 dozen cookies. I'll definitely keep making them but will use a milder molasses next time since the flavor really dominates the cookie.

Chewy Chocolate Chip Oatmeal Cookies

Great, classic cookie. I thought it tasted similar to Quaker's recipe. I used almond extract instead of vanilla and cranberries instead of chocolate chips...I love this variation.

Soba with Toasted Sesame Seed Sauce

This dressing is great. It's so light and can taste good with almost anything you add to it. I added cucumbers, pea shoots, tofu, sliced fish balls. I'll be making this often.

Authentic French Meringues

I tried this recipe, but they didn't turn out like I'd hoped. I don't know if I didn't cook them long enough or not mix them long enough, but after the 3 hrs of baking time, I had meringues that were firm on the bottom, but marshmallowy on the top. Any suggestions? I do want to try them again.

Macaroon Cookie Bars

I tried the devil's food cake mix, as well as yellow cake mix. Both were very good. I agree w/ the other review which said it was not very cookie-like. It definitely has the consistency of a brownie...but still very yummy!

Boston Cream Pie II

The chocolate was a bit overwhelming for my taste, but the cake and custard recipes were great. I would probably make more custard for a nice thick layer in the middle.
