Homemade Black Bean Veggie Burgers
These are soooo good, no changes needed (I do blot the processed veggies with a paper towel to soak up as much liquid as possible and add whatever amount of bread crumbs to get a good consistency). A hit with the whole family -- YUMMY! Make sure to double the recipe and freeze half of the patties for a quick dinner later.

Sam's Famous Carrot Cake
OMG...I cannot believe that I have not reviewed this recipe yet (although my review is obviously not necessary since everyone agrees -- YUM YUM YUM). I have made it 3 times in the past month, if that's any indication. I replace some of the oil with natural applesauce (last batch: 1/4 c. oil and 1/2 c. applesauce, although next batch I'll be brave and try all applesauce) and there is no loss of moisture...just fat & calories. I also sometimes replace some of the white sugar with brown sugar (not sure if I can tell a difference). My family does not like raisins, so those are omitted. I use the Cream Cheese II frosting recipe from this site (with low fat cream cheese/Neufchatel)-- so so so good!

Vegetarian Korma
Just made this for dinner...delicious!!! I followed other reviewers' suggestions: replaced cream with a can of light coconut milk (and added it at the same time as the tomato sauce so there was extra liquid to help cook the veggies), added some cauliflower, and only used one large russet potato (other reviewers made me nervous that it wouldn't cook in a timely fashion, so I microwaved it first, then peeled it and cut it, then added it a little later in the recipe). Too lazy to embellish the spices and glad I didn't...the curry powder tasted great! I did have to add a little extra liquid at the end (used the skim milk I had on hand). We will definitely put this recipe in our favorites file.
