Holiday Punch II

We served this alongside other holiday punches at Christmas dinner, wow! I tripled the recipe and we still ran out before the evening was over. I made one bowl using diet ginger ale and they both tasted the same so going forward I will probably only use diet ginger ale to save on calories.I made recipe just as written, I do feel making it ahead of time allows the flavors to meld. The almond extract is essential, if you omit it please do not rate this recipe as you are missing the essence of the drink. this has become my go to non alcoholic drink recipe for crowds, in fact I'm making it tomorrow for our Superbowl party! thanks Aleta!

Apple Dumplings I

Absolutely wonderful recipe! My husband whose favorite dessert is peach or apple cobbler has declared this as its replacement. I have made these almost every weekend since we found this recipe. I too followed the recommendation of other reviewers: reduced water to 1/4 cup, cut apples in wedges before wrapping with dough and covered with cinnamon/sugar mixture. I used 1/2 jazz apples and 1/2 granny smith and found that while the flavor was the same with both the jazz apples maintained their shape better and the granny smith cooked down to almost nothing, but both were fabulous! Also I made 1/2 with crescent dough and 1/2 with ready made crusts and hands down everyone thought the ones with the crescent dough were better. I also added nutmeg before pouring on the sauce. The last time I made them I didn't bother peeling the apples and it didn't seem to make any difference. Do yourself a favor and make this dish...next time will try reducing the butter because I don't think it will affect the flavor that much.

Brazilian Fish Stew

We just had this stew for dinner tonight and I must say it was fabulous...will def add it to my rotation. Ok now for my variations: we love bell peppers but I agree with the other posters 4 seemed to be too much. I used 1 large red pepper and 1/2 green pepper and it bordered on too much...next time will use 1/2 red and 1/2 green. The diced tomatoes & coconut milk only came in 13.5 oz cans so I added 1/2 8 oz can of coconut water. Also I love the sweetness of scallions so I used 1 yellow onion and 6 green scallions. Finally, the seafood I used was Red Snapper, Whiting and shrimp (that's what I had on hand) and they held up perfectly! Next time I think I'll substitute lemongrass for the cumin for a true Thai flare...so glad to have found this one!
