Huckleberry Peach Cobbler

Excellent recipe modified. I used six fresh, ripe peaches, and 1 cup blueberries instead of huckleberries. Additional mods: 1) Added 1/4 tsp. cinnamon and 1/8 tsp. nutmeg to fruit mixture; 2) increased topping by one half; 3) to topping added 1/8 tsp. nutmeg and 1/8 tsp. cardamom; 4) substituted buttermilk for milk. As mentioned by others, the fruit mixture does end with more liquid than typical, however, with the increase in topping it evens out. Delicious and will make again:)

Chef John's Macaroni and Cheese

I have been searching for an incredible macaroni and cheese recipe for awhile, to alternate with the one I typically make (which is close to perfect). While Chef John's recipes for lasagna and chicken parmesan are 10 stars, this one is just meh. Will continue the search.

Chicken Parmesan

Made this earlier in the week with the following mods: 1) Did not fry in olive oil, instead, placed prepared chicken on rack on top of cookie sheet, misted each with olive oil, baked for 20 minutes at 350, then turned over and baked at 450 until browned (only took a few minutes); 2) topped only with homemade sauce and mozzarella, continued to bake until cheese was bubbly and began to brown; 3) served with spaghetti in sauce topped with a drizzle of olive oil and fresh grated pecorino romano. Compliments on this dish - The best dish I've ever made; Better than Olive Garden. It was delicious! Will make again.

Southern Ham and Brown Beans

Just finished having this for dinner and zomg....these southern beans are what I remember from childhood. Modifications: 1) Soaked the beans in water overnight, for about 10 hours; 2) Replaced 2 c of the water with 2 cans chicken broth; 3) added 4 cloves garlic instead of 2. ADDITIONS: 1) One half large carrot, diced (instead of adding sugar, a small amount is imparted via the carrots); 2) one half rib celery, diced. All placed in crock pot on low for 6 hours, left to cool in pot for 1 hour; season to taste with additional chili powder, garlic powder, onion powder, salt, pepper. Serve with diced onions.

Apple Coffee Cake

Delicious & a fav w/ the family. Here are my modifications to the batter for a LOW FAT and more flavorful alternative: 1) Instead of 1/2 c butter flavored shortening, I used 2 T softened butter plus 4oz unsweetened applesauce (Mott's single serve ); 2) instead of 1c sugar, 3/4c brown sugar (lower amount due to addition of applesauce); 3) instead of 2 whole eggs, 2 egg whites (not 3 as the applesauce adds moisture); 4) low fat or fat free sour cream. ADD to the batter: 1/2 t ground cardamom, 1/4 t fresh ground nutmeg.

Streusel Apple Coffeecake

Delicious, moist, flavorful cake for breakfast and/or desert. Changes made: 1) added 1 teaspoon cardamon and 1/8 teaspoon freshly ground nutmeg to the cake batter; 2) used 16 oz container lowfat sour cream instead of the yogurt; 3) used 3 diced granny smith instead of 2; 4) added 3/4 of the apples to the middle, as directed, and the remaining on top, before the streusel mixture, pressed into the batter. All raved about the cake and asked that I make it again:)
