Kielbasa and Bow Ties

I really liked this but it wasn't a knock your socks off dish. It is a solid Monday night dish. I'm a big fan of making a recipe as it is first and determining it's merits from that. This needs a little bit of help in spice arena. My next revolution will be to add some veggies like peppers maybe and some more seasonings to help along. So overall I'd say start at this point and add some things to kick it up a notch or three. Try it's good

Cornbread Muffins I

Made these tonight with pot of beans and ham. Perfect! Turned out moist and delicous. I'll admit I've ever put much effort into cornbread but I do believe I will be retiring the box mix after this

Creamy Rice Pudding

I grew up with my grandmother's rice pudding and that has been the "gold standard" for me as rice pudding is one of my favorite things on the planet. I loved this recipe because of it's simplicity and quick prep time. While nothing will replace the old fashioned oven baked rice pudding this is a "gold standard" for quick prep rice pudding. I will be adding this to my recipe box and calling on it often I'm sure. One can't ask for a better recipe.

Grandmother's Buttermilk Cornbread

I was tempted to reduce the amount of sugar like a few reviewers did but I remembered some very sage advice from Ms. Paula Deen that the first time you make a recipe you should follow it to the letter the if you want to make it your own do it later. I am so glad I did!! This is perfect cornbread!!! The sweetness level was perfect I had previously never been able to make cornbread I resorted to the box. I now have a "go to" recipe and for me there is no tweeking necessary!! The empty pan spoke volumes as did the trips back for seconds!!

Braised Balsamic Chicken

This turned out absolutely perfect!! I can't believe how easy it is and delicious. It's also so readily adjustable to the number of people you're feeding. I followed the recipe exactly. Believe it or not it is actually better as left overs the next day. Hard to believe but it is.

Baked Oatmeal I

This was a great weekend breakfast. Thoroughly enjoyed it. I counted this as a "cheat" breakfast since it was Saturday. Next I'm going to try to reduce the sugar amount or use alternative sweeteners to make it a little lighter. But you should always follow the recipe the first time and I was not disappointed by this one. Definitely a keeper.

Irish Potato Casserole

I loved this and so did everyone else. Unfortunately the only reason I can't give 5 stars is because I couldn't follow the recipe exactly. Somehow inexplicably I had no cheese in my house whatsoever so I made this without any cheese in it. I'm certain that a nice sharp cheddar would have made this even better and 5 stars. I will be making again soon and with cheese I'll up my rating to 5 LOL

Turkey and Quinoa Meatloaf

This was my first attempt at a "lighter" meatloaf and it did not let me down! I read the reviews and made just a couple alterations I added an extra egg and instead of the hot sauce I added a low cal BBQ sauce. Instead of just salt and pepper I used Montreal steak seasoning cuz I wanted it to taste like a "real" meatloaf. I've already shared with friends and will definitely make this part of my repitiore

White Bean Chicken Chili

This is an awesome recipe!! I doubled it so I could have left overs for lunch throughout the week. Only thing I did different was I substituted the chiles and tomatillos for a good salsa. I don't particularly care for tomatillos. It turned out fantastically!!
