Garlic Chicken with Orzo Noodles
I made this two nights ago for dinner. I want to say I made it exactly as written but I would be lying. I followed the reviewers suggestions and added a can of diced tomatoes (along with the fresh spinach - this mom does what ever it takes to get her kids to eat their veggies!) and cooked the orzo in 2 cans of low sodium chicken broth, which I didn't drain because the orzo sucked all the broth right up. I also only had whole wheat orzo so that is what I used. I finished up the recipe as directed. The results? A very flavorful and deliciously healthy recipe that my entire family loved. My husband surprised me the most, he loved it and requested we have it again soon and he is not into healthy foods at all. I will probably continue to make it with those modifications because my family enjoys it and that is all I can ask! A really great base recipe though! :)

Easy Marinated Pork Tenderloin
I adore this recipe. I throw all the ingredients together (without any extra salt and I use low sodium soy sauce) in a bag and let it marinate all day long. Once I forgot about it and left it in the marinade for 3 days and even then it turned out fabulous. I cook it as directed but always check the internal temp. Sometimes I turn on the broiler and let the marinade really carmalize during the last few minutes of the cooking time. I haven't grilled it yet but I bet it is good that way too. It is so tender and juicy and the flavors are amazing. I pair this with oven roasted potatoes and veggies. It is always a easy meal that my entire family will eat.

Sweet Corn Bread
Tried this tonight, it was fabulous. I doubled the recipe since I was wanting left overs for a meal tomorrow and baked the whole thing in a pre-heated cast iron skillet. I actually only put half the butter in the batter and the rest I melted in the skillet before I poured the batter in. I also sprinkled a tiny bit of brown sugar on the top as well. It was crispy on the outside and moist and tender on the inside with plenty of flavor and paired perfectly with the veggie soup we had tonight. Totally made me feel like a master of the cornbread! :)
