Big Soft Ginger Cookies

Reviewed: Dec. 21, 2003
Awesome! Awesome! Awesome! The best ginger cookies ever! I used real butter but left out the cloves (not a big fan of them). They were moist, delicious, a true family favorite! Thanks!

I baked them too long also. A little dry for my taste but I think that I will make them again nd decrease the baking time. Other than that, they were great!

Pepperoncini Beef

Reviewed: Nov. 2, 2003
I really wasn't ecpecting the "spice" in this dish. I used mild banana peppers and it was way too spicy for kids. My hubby and I like the extra kick and it was a very easy dish to make but probably won't make again.

Quick, easy, and just the way my family likes it! I usually can't get my kids to eat refried beans, but mixing them in with this dish made it easy! Thanks Kathi!!!

Beer Butt Chicken

Reviewed: Aug. 6, 2003
It was okay...I didn't really taste the difference between this and a slow roasted chicken. It was tender and juicy, but no real added flavor. Probably will just stick with my good old fashioned slow raosted chicken in a roasting pan in the oven.

Chicken Chimichangas

Reviewed: Jun. 5, 2003
Good recipe, although I need a little more flavor with this one. It was a little dry and even though we love guacamole, I wish there was some type of sauce that the chimi's could have been moistened with. But overall, I believe we will have it again!

Excellent! A Keeper! I used seasoned bread crumbs instead of saltine crackers. Very easy to make and makes great leftover meatloaf sanwiches for next day lunches!

Strawberry Trifle

Reviewed: May 23, 2003
Excellent! I made a few changes after my husband said it was a "little heavy". I used real whipping cream. After whipping and after preparing the pudding according to the box I gently folded the two together. I also used fresh strawberries. I then placed the cubed angel food caked in the bottom, then whip cream and pudding mixture followed by freshly sliced strawberries and continuing for 2 more layers. I topped the last layer of strawberries with freshly whipped lightly sweetened cream and garnished the top with uncut strawberries. I got rave reviews! It was light, simple and a perfect change from heavy desserts! BRAVO!!!

Seafood Enchiladas

Reviewed: May 20, 2003
Very easy! Added some left over pre-cooked shrimp and my kids loved it! They thought they were chicken enchilada's, as it's tough for us to get them to try ANY seafood.

Extremely tastey. One of our favorites and very easy! I pounded the chicken breasts out which help decrease amount of time you had to saute in butter. Will be making this one again!

It was like shoe leather, and I slow cooked it for more time than the recipe said becasue other reviewers stated that was the key. Never will make it again.

Irish Chicken and Dumplings

Reviewed: Apr. 5, 2003
Family Favorite! I did use the recipe on the bisquik box for the dumplings and also cut he poultry seasoning in half. I added 1 chicken bouillon cube and it was perfect! I also used only 2 large potatoes. We had the left-overs over my husbands homemade perogies! Will make again for sure!!!!
