Basic Corn Muffins

This is the same recipe I have made forever (my Mother and Grandmother did as well). Only difference is we use bacon grease (gasp!!) in place of the oil. Melt about 1/3 cup in a cast iron pan or pyrex dish. Pour about 1/4 cup into the mix leaving the rest in the pan. Makes a wonderful crunchy edge on your cornbread. May not be as healthy as using canola oil but worth the risk!!!

Easy Chicken Casserole

The 5 stars is for my version of this recipe. I haven't actually made this one. I add a can of chopped green chilies, cooked noodles and an extra can of soup. I also melt a stick of butter into a sleeve of crushed ritz crackers for the topping. I have made this recipe several years.

Creole Pork Chops

Thanks for a great recipe. Totally easy. The only thing I did different was to add minced garlic and creole spice. Served it with rice. Can't wait for lunch to have the leftovers.

Round Steak and Gravy I

WOW!!! We really enjoyed this. I used a package of onion soup mix instead of chopped onion and beef boullion, and added about 1/3 cup more water. Also covered for the first 45 mins. or so as others had suggested. This will most certainly be made again and again.

Microwave Oven Peanut Brittle

I have used a similar recipe for probably 10 years. It is the simplest in the world. Try using butter sprinkled with a little salt to grease your cookie sheet. That's the way my Mom and Grandma always did theirs so guess that's why I do.

Sunshine Toast

What a delight to run across this recipe. My Mother fixed these for us kids growing up, and her Mother fixed them for her and her sisters when they were growing up. We called them One-Eyed Egyptians. We ate them with syrup. YUM

Polish Sausage Soup

This is really good. I did make a few additions--used chicken broth instead of water, added salt & pepper, minced garlic, parsley & dill. This soup is 5 stars with the additions I made. Thanks, I will be making this again & again.

Taco Stew

Wonderful "comfort" food for a cold night. Only used 1 can beans (husband doesn't care for beans in stew), added a little salt & pepper and some minced garlic. Really enjoyed and will definitely make again.
