Hungarian Noodle Side Dish

I brought this to a party, and it was very, very popular. I personally didn't think it was extraordinary. It's ok. But boy, kids and adults kept coming back for more helping! It was a crowd pleaser for sure. Very easy to make, comforting and filling.

Bourbon-Mango Pulled Pork

Yum! A little messy work with the mangos. Also, I had to grind dried chipotle myself because I can't find chipotle chile powder already prepared anywhere. A little more work than I wanted to do for a slow cooker recipe but when I took one bite, everything was alright. It is delicious. I topped the pulled pork with cole slaw and served on a French roll. Yummmmmy!!

The Best Lemon Bars

First lemon bar I've ever made. It's easy, and delicious. Not tricks, tweaks, secret ingredients. It was so popular, my 8 co-workers ate the whole pan within a few hours.

Seven Layer Dinner

It's easy to make, and makes a lot of servings, so it's great for weeknight dinner for a large family. It's not very exciting though, as you can see, it's so simple and one dimensional. You might like to add different kind of herbs, spices, or even different kind of sauces.

Spinach Enchiladas Verde

I used collard greens instead of spinach just because it's a lot more sturdy. I blanched the collard greens so it is easier to wrap. I did have to use double or even close to triple the amount of salsa verde and sour cream. I like my food with lots of sauce. It makes enough to feed 8 to 9 people with average. appetite.

Blueberry Crumb Bars

This is very easy, quick fix. It has no butter, so it's not very Fitch, but still was a crowd pleaser. People kept going back for more. The crunch is irresistible.

Deep Chocolate Raspberry Cake

I followed the recipe and instruction exactly, except I used fresh raspberry for the filling. No professional reason. My store was out of frozen raspberry. The cake came out dense and moist. It turned out not too sweet, very elegant chocolate cake. I'd say use very good quality chocolate. A small piece satisfying me. It takes a little work, but definitely worth it. I would save this recipe for special occasion like someone's birthday or anniversary.

Pretzel Dessert

Nice crunch, refreshing strawberry, and creamy filling, this is a great treat! I did read the recipe wrong and used 15oz pretzel by mistake. I also didn't crush it fine enough. Needless to say, the pretzel crust didn't set and pieces are too big. It was still very good, but next time, I might coarsely grind the pretzel in a food processor. Then add some bigger crushed pieces so it stil have good crunch. I was very careful not to let the jello liquid go to the bottom of the dish because many people wrote they ended up with mushy pretzel crust. Once the cream mixture was spread corner to corner, "sealed," as some said, I refrigerated it for 30 min. I waited until jello liquid cooled down to room temp. I would put more strawberry though, it gives great texture. This is now my new favorite dessert!

German Lasagna

This is pretty unique, but very yummy. The sour kraut definitely gives it a character. I am not sure lasagna pasta belongs there too well, however, I might try egg noodles next time, or better yet, spatzle if I can find it. Over all, it was delicious.

Brownie Chocolate Chip Cheesecake

This is a very easy cheese cake recipe. Great combination with the brownie bottom, and instead of chocolate chips, I used Reese's peanut butter chips. I spread the chips on the baked crust then poured the cheesecake batter. I would only use a half of the brownie batter though, and make a small brownie with the remainder. In 9" round cake pan, brownie "crust" turned out too thick, so I had to hallow out a lot of it, which we enjoyed by itself. This way, I can still use the 9" round pan, which gives a beautiful end result, and fit all of the cheesecake batter. Plus, I will have a small pan of brownie. I guess I could call this a "two in one" treat recipe!

Artichoke, Mushroom and Parma Ham Tart

It was just like a breakfast quiche. I made it as an appetizer for a family dinner, and we liked it. It's not so great that we raved about it or I can't wait to make it again. Maybe I might add a twist of some kind. The loose bottom pan is a trouble though....I poured the egg mixture and veggies, put the tart in the oven, and I immediately heard and smelled dripping and burning. Some of the liquid went right through the bottom of the pan. Was I supposed to put the pan on a cookie sheet? Dripping stopped within a few minutes, but I nearly set off the fire alarm and woke up my husband!

Whole Wheat Honey Bread

I don't have a bread machine, but I really wanted to make 100% whole wheat flour bread. So I did it old fashion way. I used 4 cups of whole wheat four because it was too wet. It didn't rise very much, so I ended up with pretty dense bread but tastes great!! I set my oven 375, and the crust turned out a little hard so next time I would try 360. Because it didn't rise a lot, and texture turned out dense (but still soft and yummy!), it was very easy to slice the bread, however, if anyone knows something I should know when I want to make a bread machine recipe by hand, please tell me!

Peanutty Pineapple Carrot Cake with Peanut Butter Frosting

Cake is nice and fluffy, frosting is addictive. I do miss a little more spiciness and more density. Cake is not dry, but just very light and soft. It just was not what I typically expect in carrot cake. Next time I would like to use natural peanut better instead of Jif or Skippy, and also pineapple chunks, rather than crushed pineapple.

Best Brownies

I made this for my husband on Valentine's day. It was easy, yummy, excellent. I don't even like brownies that much, but I had some of the finished product, and wanted more of it.
